Random Recap!

Hello bloggies!  Time for a random weekend recap (plus some!)

What better way to get things rolling than half price sushi?!?!  This made an excellent preview for the weekend Friday night!

Personal note to self.  I ALWAYS get two dynamite rolls and never eat both of them.  I then take it to go, and throw it away the next day.  STOP DOING THAT!

Ok, moving on.

Lets talk about random fact #4,563 of mine….I ❤ salvage grocery stores.  These stores somehow get their little hands on items that are close to going out of date, and sell them at ridiculously low prices.  The point of this story is that on rare occasions, you find GEMS like this…

With this star ingredient, it was time to prepare some overnight oats for an extra early 5:45am Spin class the next day…

Theres just something about the PB/Jelly combo that makes me want to go back to elementary school…

This could quite possibly be my favorite way to make oatmeal!

Equal parts oatmeal/skim milk…plus toppings.  Stick it in the fridge, and then enjoy the next morning!  Overnight oats = success.

When I grabbed the oatmeal out the door I also baggied up a scoop of protein for the day.  Ever since I went meat free last year, I have become super dependent on my protein powders/supplements.  Even though I have incorporated meat back into my diet, I still do not get as much protein as I should…which is why powders are always nice to have in a pinch!  Current flavor…

Cookies & Cream!  Mmmmm…     (protein shakes make awesome snacks.  They taste great AND fill me up, which is always a nice combination.)

With it being a close friends BDay, I knew an edible gift was a must.  Stopped by my fay-voh-rite place and picked up a dozen bday donuts….look how cute!

Though it was hard, I managed to save all these for the birthday girl….and the blogger boy went without the donuts.  Sad day.

They smelled as good as they looked.

This was also apparently the weekend of delicious breakfast treats!  Saturday I had two tough classes back to back…so I powered up at Panera!

Power breakfast sandwich with bacon instead of ham…small OJ, and a wonddddddderful coffee.  I had forgotten how amazing Panera coffee is.

Mmmmm.

Between Friday morning and Sunday I had taught 4 classes and taken 2!  It was a Group Exercise mini-marathon weekend!  🙂  Gotta love those.

Today also marked the first day of the Foot RX/Wellness Center 5k training day!  This is where Group Ex instructors from my other gym get together and do an 8 week training program building people up for a 5k!  It is SO awesome working with new runners, and this is a great chance to meet some awesome new running folks.  If anyone is in the area, and wants to attend the training program come on down!  It is free, as long as you register for the race!  We have a variety of groups, from folks who have never ran before in their life, all the way to people who are running 8:00 and under miles!  We meet at the Wellness Center in JC on Sundays at 2:00pm!

Considering I slept until 11am this morning (!!!) I combined breakfast/lunch with a stop at the Cracker Barrel!  It has been FAR to long since the Barrel and I have spent some quality time together…   😉  I was stoked to see a new menu item.

Six Grain – N Granola pancakes?!?!?!  I looked no further.

These babies were loaded with granola, raisins, and almonds!

Perfection!

Well friends, another weekend comes to an end.  I am moving into my new house this week…so it is bye-bye apartment.  I will be munching on some random foods because I am putting off a huge grocery store trip until I come back!  What a pain!

No-Pudge Brownies….

Happy Weekend, bloggies!  I would also like to welcome everyone to the first day of spring!  Has this not been the coldest, harshest winter ever?  I for one am more than happy and excited for some constant warm weather.  Time for everyone to come out of their homes, and soak up the SUN!

For a fun weekend post, I decided it was going to be alllllll about the brownies.

These guys are all the taste and yumminess of the traditional brownies, but none of the fat!  Check it out!

Why do weekends always seem like the best time to bake/enjoy things like this?  Just always seems to happen that way. 😉

I love these brownies for so many reasons, one of the main ones being that it only requires ONE ingredient.  Better yet, that one ingredient is yogurt!  I always go Greek for that extra protein boost…

Speaking of protein, have you ever tried adding protein powder to your cookies/cakes/baked goods?  Throw in a couple of scoops to your mix pre-baking for some extra protein!  (You may want to try a neutral flavor like plain or vanilla, anything else might over power the mixture…besides, who wants “Triple Berry protein brownies?!?!)

One box of mix….

Plus the yogurt…  (I add a splash of skim milk, just because the Greek yogurt is so much thicker than traditional yogurt.  I also add a teaspoon each of Almond Extract and Vanilla Extract)

Since the mix makes “12 brownies” I make it easier on myself by baking these cuties in a muffin tin.  That way I know each brownie is a serving, and I don’t keep eating “one more bite” of an entire pan.  Not that that has EVER happened.  😉

(Never claimed to be the cleanest cook.  Disregard the mess all over the pan……I tended to miss.  Alot)

This is where it got fun.  These brownies are perfectly delicious as they are, but what puts them really over the top is TOPPINGS!  No pun intended, folks.

I made half the batch with choppped walnuts, and the other half with a teaspoon of natural PB in the middle.  Ohhhhhh yea.

It was time to bake these beauties!

The nice thing about brownie clean-up is having both a blogger boy AND a bff who is obsessed with batter.

And you know, of course, that it is of the utmost importance that a brownie be enjoyed with an ICE cold glass of milk, right?

Wedding Shenanigans & Coffee Vlog!

Good Sunday morning bloggies!  In the insanity that IS Tennessee weather…yesterday we had 60* and today…

Snow.  REALLY?!?!?! Ugh.  I guess I shouldn’t be in full force Spring mode just yet.

Ok, even if the weather is making me severely depressed, maybe the blog about the wedding will cheer me up!  Nothing like a wedding to put me in the fun spirit!

Yesterday was my dear friend Jennys wedding, and it was time to live it up! I knew it was going to be a good night when I walked in and instantly smelled the sweet aroma of buttercream icing.

Cupcake mountain?  I knew this was going to be a good wedding.

*drool*  I had to be polite though, and wait for the cake to be cut.  🙂  In the mean time…check out how cute the tables were!

Score!  Along with a (sadly non edible) deck of cards!  How cute.  The decorations were amazing, including this ice sculpture:

amazing, or what?  The bride wasn’t half bad either!

Neither was my date, the bff, Steph!  Do we look fresh out of Dancing With The Stars, or what?!

And lets not forget the food…

Spring Mix Salad, Sauteed Veggies, Green Beans, Mashed Potatoes, and Prime Rib!  Mmmmmm…

It was a great spread!

Now lets get to the good stuff….cut that cake so the dessert madness can begin!

Don’t worry, I think the bride shared in my cupcake obsession.

I don’t know about you guys, but simply the SMELL of that icing is enough to send me into convulsions.

They were everything a great cupcake should be!  Technically one was saved for Steph, but I maaaaaay have eaten them both.  Who’s to say.  Don’t worry though, there was TONS of dancing for a nice post cupcake calorie burn…

I even busted out some Zumba moves!  I knew that class was going to come in handy eventually.  All in all, a fantastic night with amazing friends!

This kind of partying is hard for a guy who is used to 9pm bedtimes! 🙂  Needless to say I collapsed when home, and fell into a coma like state…not waking up til after 9am this morning!  Craziness!  I turned on my Keurig and instantly whipped out the FlipCam to document it.  Coffee lovers out there, if you have not already heard of this beauty…prepared to be amazed.

There are some mornings that I honestly do not know how I would survive without it.  I got this bad boy for Christmas, and it was definitely my “Red Ryder BB Gun” type of present.  I was like a giddy 6 yr old who was unwrapping a brand new Nintendo as I tore into that gift.

You can buy the pods in just about any flavor you could possibly imagine, and they even have an accessory that allows you to use your own ground coffee.  Sweet!  I highly recommend Jamaica Me Crazy by Wolfgang Puck.  It is fantastic.  Dark roast, but smooth with a hint of coconut!

The Florida mug that I picked up running my second half marathon is always a must.  I think everyone has a favorite mug, right?

Save A Horse, Ride A…..Camel?!

Happy Weekend, my fellow bloggies/blog readers!

This weekend has been busy, yet wonderful…as always!  Started out with a fannnn-tastic Saturday full of Eight To The Eight action!  We went to a local park for a 6 mile hike to the top of a massive Fire Tower….some of the views in this place are gorgeous!

Even the deer needed a break from the sweltering heat!  Snapped this pic as she cooled herself in the shallow waters.

The race up was intense!!!!  Brian from the Black Team narrowly beat the others and claimed the prize!  He BOOKED it up the mountain!

We hung the winning medal on the base of the “Fire Tower” which is this HUGE tower that overlooks our city:

Check that bad boy out!!!!  Scary stuff!  (I don’t ever go up it, it is too rickety!)  A fellow BLOG GIRL did go up the tower!!!

Emily came with us today!!!!  😀  😀  😀

All in all, one fantastic day!  Can I also just say what a workout it is to try and JOG a trail run with massive rolling hills!  Worked those hamstrings way harder than I anticipated!  Awesome workout, though.  I can’t get enough of this park…..and being outside in general this time of year.

Once I had finally made it back down, and waiting on the teams….I snacked on one of the little cuties that were sent to me courtesy of The Protein Bakery!

This was the perfect carb replenishment I needed post-hike/jog!

Can I also just randomly mention my absolute favorite method for consuming my precious Chia Seeds?!?!

I like to water down a Crystal Light Fitness packet, and then add the Chia Seeds!  It turns into a gel’d up flavored water!  So good.  The consistency takes some getting used to, and I am pretty sure you either hate it or love it.  I happen to love it.

After a day of heat and sweat, a nice dinner was needed to wind down the Saturday!

Thai food is always an instant win.  I went with the peanut sauce over mixed veggies, with steamed brown rice.

There also may have been some Martini action involved.  Come on people, when the owner is begging you to “sample” some of his favorites….how can a blogger resist?

mmmmmmmm.

After a day of Thai, hiking, and hot sun…..I can’t think of a better way to ring in the summer than a free Summer Solstice yoga session in the park!  My favooooorite instructor, and all around awesome human, Wendy led a free session under the stars!  It was beyond fantastic.  It was dark, so no pictures.  I will let your imaginations run wild.  Needless to say, I will not be happy until I complete this pose…which was a complete FAIL last night!

With that awesome Saturday to a close, it was time for an equally rockin’ Sunday which included a trip to the ZOO!!!!!!!  The inner animal freak in my was as giddy as a school girl with all the animal anticipation!

We also did what everyone secretly wants to do on a daily basis.

We also ate at a new to me, and super yummy Vegetarian friendly place in Knoxville, Tomato Head!

One sandwich immmmmmediately caught my eye, mostly because of all the cheesy goodness.

(I opted for fruit instead of the standard blue corn chips)

We also stopped by one of my favorite grocery store, Fresh Market, and picked up one of my FAVORITE cookies of all time.  (Heck, I am going to go ahead and throw out there that this is, indeed, my favorite cookie.)

And on THAT note, dears……..I am bidding you farewell as I sit at the Starbizzle…blogging, and updating Eight To The Eights schtuff.

Embrace Your Inner Hippie.

I’m pretty much that was the theme of the day yesterday, which I love….love….LOVED!

We started our Asheville adventure bright and early and headed out, Mountain bound!

Ok, Ok.  Technically Asheville is only like an hour away…but you know I couldn’t resist some snacks for the road!

I was diggin’ on the Hermit’s!  Bought them because I knew Emily had enjoyed them, and said they reminded her of Christmas!  I am all about some Christmas tastes!  She was right!  Yum!

Maggie and I also split my FAVORITE bar pre-downtown festivities!

We were ready to shop!

There was one slight problem.  It was FAH-reezing.  Granted, it was sunny and glorious, but the wind made it feel like winter time!  Brrrr!  FAIL!

Despite the frigid weather, Asheville was beautiful!

We went from shop to shop trying to avoid the cold wind!  There were tons of unique little gift shops, and I must say….it was hard not to adapt the “hippy” frame of mind!  I was digging it!

Speaking of digging.  After walking around in the arctic tundra for a while, we finally found Greenlife Grocery!

(check us out in the reflection!)  This place was so much fun!

BOOTY!!!!  Too bad I have 3 un-opened bags.  😉

I also grabbed one of my favorrrrrrite items, of which Ashlei introduced me to a couple of months back…

Coconut Butter anyone?!?!

After leaving the grocery store, we also spotted some killer graffiti.

Cause this is thriiiiiilllllllaaaaahhhh, thriiilllaaaaahhhh niiiight!

After shopping, braving the cold winds, and walking…it was time to eat!  This place was full of fun restaurants, but we decided to go with an ALL veggie option, which I knew was going to be an instant win.

Check out their website for more information!  This place used to be located under a YMCA…which warmed my heart that much more!

It was so overwhelming having an entire MENU to choose from rather than 2 or 3 options.  So nice!  I was literally torn on what to get!  The menu was so expansive and impressive.

My eyes kept floating back to one particular dish…

The waitress also told me since it was my first visit, I had to try their special jalapeno/onion french fries.  Sounded like a plan to me!

This was so good, I’m not even sure if words will suffice.  The root vegetables were cooked perfectly, and blended so well with the sauce.  Speaking of SAUCE….the light and almost buttery sauce covered the entire dish, and the wheat ciabatta underneath soaked it up like a flavor sponge.

Then there were the spicy fries:

Spicy/Crispy peppers and onions = Tyler found his happy place.

Seriously, I am moving here.

Hippies….Vegetarian Eats….URBAN OUTFITTERS.

Dear Asheville, where have you been all my life?!?!?!

Sadly, it was time to head home, but not before hitting up their local Earth Feezy!

Where I picked up a nice Vegan Chocolate Chip cookie, for the road!

Check out the scenery!  Maggie and I were trying to determine what this chapel like structure was!  Still couldn’t figure it out.

Who knows.

By the time we got back home, I needed some caffeine replenishment.

I swear, there was coffee in there at some point.

Dinner time rolled around and we were both craving Indian food!  Sahib time!

We split the Aloo Gabi (Cauliflower), and the Baingan Bartha (Eggplant)

Deeeeee-licious.

Then, as if we hadn’t had enough excitement…we met up with our friend Melissa, and went to see the new Steve Carrel movie, Date Night.

Hilarious!!!

(now let us fast forward 8 hours, after Tyler finally gets to sleep.  Don’t you just love the magic of Blog-O-Vision?!)

Breakfast was a delicious and random mixture:

Best part was the strawberries the size of my FACE!

I started my bowl with some PB Puffins and Granola from the Feezy…

I then covered the dry mixture with rasp/strawberries and then covered in Almond Milk

Yummmmm. Cold cereal on hot days = love.  Poor Mr. Quaker is probably angry that I have been forgetting him as of late.

It is sunny….Saturday, and gorgeous.  If you aren’t stuck inside working like I am, get out and enjoyyyyy it!

Mongolian Grill-ness.

It has been entirely too long since this blogger boy has indulged in some Chinese dinner goodness.

This is yet another example of how you can eat OUT, and still eat healthy in an all-to-easily unhealthy atmosphere.  Don’t get me wrong, this place was chocked full of the classic sodium-ridden buffets full of fried things that I didn’t even realize could be fried.  (corn….mussels…..SALMON?!?!)  If you ever get a chance to go to a Chinese/Japanese place with a Hibachi grill…go for it!  Totally delicious and healthy!

It was raw veggie heaven!

My bowl ready for action:

  • Broccoli
  • Cabbage
  • Squash/Zucchini
  • Mushrooms
  • Red Peppers
  • Pineapples

Topped with 3 spoonfuls of pineapple sauce, and it was grilled up!

From the “bar of doom” I grabbed a couple of pieces of sweet potato, and two small portions of Rice and Noodles.  Deeeeee-licious.

Resisted the urge to get dessert at the restaurant because I knew that Emily and I were grabbing TCBY before Starbizzle later.  Come on though, how could I resist this.

Thank you, cookie-sahn.

Once dinner was ovah, headed to Johnson City to meet Emily and Russel for some yogurt!

I wanted my fav-o-rite flava….but resisted:

9.5 times out of 10 I would hands down get this flavor, but I snuck in my own toppings:

Have I mentioned that I am currently obsessed with my dried Kiwi/Mango?!?!?!  It went perfectly with White Chocolate Mousse

C’mon people.

I then scurried over to Starbucks where we both currently sit!

Now, if you will excuse me…I have some Chess to attend to.  Hopefully tonight will be complete domination!!!!
