Random Recap!

Hello bloggies!  Time for a random weekend recap (plus some!)

What better way to get things rolling than half price sushi?!?!  This made an excellent preview for the weekend Friday night!

Personal note to self.  I ALWAYS get two dynamite rolls and never eat both of them.  I then take it to go, and throw it away the next day.  STOP DOING THAT!

Ok, moving on.

Lets talk about random fact #4,563 of mine….I ❤ salvage grocery stores.  These stores somehow get their little hands on items that are close to going out of date, and sell them at ridiculously low prices.  The point of this story is that on rare occasions, you find GEMS like this…

With this star ingredient, it was time to prepare some overnight oats for an extra early 5:45am Spin class the next day…

Theres just something about the PB/Jelly combo that makes me want to go back to elementary school…

This could quite possibly be my favorite way to make oatmeal!

Equal parts oatmeal/skim milk…plus toppings.  Stick it in the fridge, and then enjoy the next morning!  Overnight oats = success.

When I grabbed the oatmeal out the door I also baggied up a scoop of protein for the day.  Ever since I went meat free last year, I have become super dependent on my protein powders/supplements.  Even though I have incorporated meat back into my diet, I still do not get as much protein as I should…which is why powders are always nice to have in a pinch!  Current flavor…

Cookies & Cream!  Mmmmm…     (protein shakes make awesome snacks.  They taste great AND fill me up, which is always a nice combination.)

With it being a close friends BDay, I knew an edible gift was a must.  Stopped by my fay-voh-rite place and picked up a dozen bday donuts….look how cute!

Though it was hard, I managed to save all these for the birthday girl….and the blogger boy went without the donuts.  Sad day.

They smelled as good as they looked.

This was also apparently the weekend of delicious breakfast treats!  Saturday I had two tough classes back to back…so I powered up at Panera!

Power breakfast sandwich with bacon instead of ham…small OJ, and a wonddddddderful coffee.  I had forgotten how amazing Panera coffee is.

Mmmmm.

Between Friday morning and Sunday I had taught 4 classes and taken 2!  It was a Group Exercise mini-marathon weekend!  🙂  Gotta love those.

Today also marked the first day of the Foot RX/Wellness Center 5k training day!  This is where Group Ex instructors from my other gym get together and do an 8 week training program building people up for a 5k!  It is SO awesome working with new runners, and this is a great chance to meet some awesome new running folks.  If anyone is in the area, and wants to attend the training program come on down!  It is free, as long as you register for the race!  We have a variety of groups, from folks who have never ran before in their life, all the way to people who are running 8:00 and under miles!  We meet at the Wellness Center in JC on Sundays at 2:00pm!

Considering I slept until 11am this morning (!!!) I combined breakfast/lunch with a stop at the Cracker Barrel!  It has been FAR to long since the Barrel and I have spent some quality time together…   😉  I was stoked to see a new menu item.

Six Grain – N Granola pancakes?!?!?!  I looked no further.

These babies were loaded with granola, raisins, and almonds!

Perfection!

Well friends, another weekend comes to an end.  I am moving into my new house this week…so it is bye-bye apartment.  I will be munching on some random foods because I am putting off a huge grocery store trip until I come back!  What a pain!

*Exhale*

Hello, bloggies!!!  SO much has happened in the last few days I feel like we need a “previously on…Healthy and Fun” montage.

SO, where did we leave off.

For the first time in my LIFE I am officially on my own. Just recently moved into a house that I will be renting until September.  Fully furnished/ready to go.  It is AMAZING.  I am here…all alone.  I could walk around the entire house in nothing but my birthday suit, and no one would be the wiser (aside from some very confused dogs.)  Pictures of the new pad coming, I promise!

Also, in more exciting news….yesterday was both the Eight To The Eight’s interview process as well as Kathy Griffin live in Knoxville!!!  (insert girl squeal here, please.)

It was so odd being a “judge” for a competition like this.  I used to watch American Idol and think “those judges have it so easy!!!  Why do they need to take breaks?!?!”  Let me tell you.  After asking the same questions 400 times in a row, and sitting in one very uncomfortable seat….it gets exhausting!  Added to the fact that we had about 35+ 10 minute interviews (both couples and individual applicants) with literally about 15 seconds between.  Sheeeeeeew.

That being said….it was totally humbling, and one of the most rewarding/emotional times of my life!  Seeing all these people really putting themselves out there and admitting they need help becoming healthy really just puts things in perspective for me.  We had AMAZING applicants, and I have no idea how we are going to narrow it down to 8 teams.  No idea.  We are meeting for dinner tomorrow to go over applicants one more time (this time with included pictures!) and hopefully we can all come to a decision.

After interview time….one gal was on my mind:

Also, unknown to us….it was being taped for her new stand up special “Kathy Does The Bible Belt” on Bravo June the 8th!!!!  Score!  Make sure to watch/DVR and look for your favorite Blogger Boy doubled over in tears of laughter.  😉

When she started to rip on the show Hoarders…I lost it.  This show is one of my guiltiest pleasures…..and she had everything spot on, including the “cat skeletons” in these peoples homes!!!  If you don’t know what the beauty of Hoarders is………enjoy.

Yea…..fun times.  😉

On the way to Kathy, I munched on a variety of fun eats that I had packed for the road!

This bad boy was a banana/jam/almond butter wrap.  Booyah!

What can I say???  A days worth of interviews works up an appetite!  Starbucks was involved for hydration.  Have I mentioned the love affair I am currently having with the Passion Fruit Tea?!?!

There was also a run in with the infamous booty.

And because I wanted to keep the doctor away…

Unfortunately….this is where the camera went bye bye.  They were militant about no cameras due to it being a TV film production, so I wasn’t able to snag any action shots.  In true Kathy fashion…she was absolutely friggin’ HILARIOUS.  Take my word for it.

This morning was a scorcher!!!  It seemed to already be in the 80*’s at breakfast time….at which point, the Barrel was calling my name hardcore.  😉

Their oatmeal is fannnnnnnnntastic.

At this point, I went into crazed-man packing mode…and started getting ready for the move.  I was shocked at how much junk I have actually accumulated.  Are you ready for the number of tennis shoes I had at the bottom of my closet?!?!?!?!

….seriously….get ready.

*27* PAIR!!!!!!!  What.  The.  Heck.

WHY does anyone need this many shoes?!?!  I didn’t even realize I had that many!  Needless to say, alot went in the donation pile, and did not make the move.  Perhaps I am more of a “Hoarder” than I gave myself credit for.

Lunch was somehow crammed in my face between clothes/random items being shoved into the car.  Huge bowl of Kashi Go Lean Crunch with raisins, chia seeds, and Almond Milk:

Once my car was filled to the brim with clothes, shoes, and more shoes 😉 I headed to my other gym for our FINAL group run.  It was very sad because this program has been amazing!!!  The “beginner” group has progressed so much, and I am so proud of all of them!!!  Also, it was an absolute scorcher out there today…and I never once heard a complaint.  You guys rock!!  Our big race is this Saturday…cannot wait to run with them and push them along…they will kill it!

After the running program, it was time for a much needed dinner with Maggie, and her adorable nephew, Greyson!

Who needs a high chair when you have a perfectly good lap?!  😉

Went to one of our favorite locations, Jack’s Grill!  Bonus was when we showed up for all day brunch!

I am not a fan of the flash!!!  It made the broccoli look extremely odd.  Darn you, low lighting!  😉  You get the general idea.  Pretty darn delicious.

Now I am in my NEW home…trying to get everything put away.  Decided blogging was my #1 priority.  I don’t know if that is a good thing, or an extremely sad thing…but it is what it is.  😉

Night bloggies!!!

Did I mention I am literally within WALKING distance of the YMCA now?!?!  Bring it on Monday.  I don’t even need a car.  🙂

French Breakfast…ala Bob!

Good morning blog world….how is everyone?

Technically it is not morning time, but Sundays are my ONLY lazy-ish day of the week so I tend to embrace the “morning” feeling all day long.  Stay in those comfy clothes…..sip some great coffee….whatever you need to do to get ya in the mood.

Normally Sunday morning breakfast is a pre-planned trip to the Barrel, aka Cracker Barrel….however, today we went with something a bit different…

The Bob!!!

I was very impressed with their “healthy” options, even for breakfast!  Crepe anyone?!?!

I ended up picking off all the toppings from the crepe, and putting it in the oatmeal.

I must admit, in the Bob VS. Barrel throw-down……Bob came out victorious today!!!

There was also plenty of the brown stuff to keep me awake:

Delicious!  Has anyone eaten at Bob Evvans??  What do you think?

Rewinding a bit to last night…when I got off work, it was time to meet Emily, Russel, Christie, and Phil for dinner at a small little place downtown…

This place was super nice, but was majorly lacking on the veggie options.

It was the typical sports bar-esque place….so I had to poke around the menu a while to find something that wasn’t covered/contained/sprinkled with meat.

They did have SWEET POTATO FRIESSSSSSSS...which makes me happy, and almost forgave them for the lack of vegetarian fare.  Ended up with the fries, and a house salad.

The salad was actually really impressive, with lots of veggie representatives.  😉

And the fries, as always, never dissapoint.

Someone may have helped me eat them.

After dinner, we hit up Starbizzle for a little coffee lurv.

Where Emily proceeded to use my laptop as a portable boom box.

Did I mention how GINORMOUS my laptop is.  *sigh*  I love it, but good grief.

Also, I finally broke down and purchased a gift card to the Starbizz.  After months of illegally using Kim’s login/password to get online while in the store…I decided it was time I bought one of my own.  Bonus….it is a key chain!!!  Why do I feel like the $20.00 I put on that will be gone in the literal blink of an eye?

If you don’t have a registered card, you need to get one asap.  You get free refills (score)….free schtuff on your birthday (score’er)…….free drink after every fifteen (score’er’er)……annnnd free wi-fi (scorest.)

Well, off to enjoy the rest of Sunday.  Running program to coach @ 3:30….dinner with Heather…and then I am introducing my friend Patrick to the movie “28 Days Later” which is the best zombie movie EVAH!!!

Tomorrow is literally going to be insane.  I am teaching Spin twice….subbing a Sculpt class, teaching my KidFit class (once to High Schoolers…once to Elementary), AND going on the local news to talk about Eight To The Eight’s.

NERVOUS WRECK.  I have neverrrrrr been on the news, I hope I don’t freeze up and start drooling or something.

Rahhhh, Rahhhh, Ooh Laa Laa!

Well, my first run back today went great.  Absolutely NO knee pain!!!  More in just a bit.

Since it is Sunday…it meant only one place for breakfast!

Cracker Bizzle!  Nothing like a big bowl of their oats (plus pecans and a sliced nana) and their lovely Bran Muffin.  Who says you can’t go somewhere like this and eat healthy?!  Met Heather there who is going to apply for our city’s version of Biggest Loser (I get to be the trainer..but not the mean kind.  😉 )

She even brought a notebook to get all the information on applying, etc….talk about dedication already.  Heather, you are going to rock it girl!!!

Fast forward to lunch where I totally regressed back into my elementary days.

Almond Butter and Peach Jam sammie with a hugh jass apple, and some veggie stix.

Deeeeeee-licious.  Sometimes (or always) it is nice to embrace the inner child.

I love you because you are part of the weekend, but MUST you put me in misery with weather like this:

I swear that Garden Gnome keeps moving closer and closer to the door.  Which just HAPPENS to be right in front of MY room.  *shutter*  And why is he randomly doing the Nazi salute?!?!  A) Who makes these things and B) Why does my mother buy them?!?!?!

After lunch it was time to start prepping for my Running Program that I am coaching at my other gym.  This program gears participants for an annual 5K in the area, and is divided up into three groups.  Beginners, Intermediates, and Advanced.  I was stoked to finally be able to gear up in full running attire!

It was a smidge rainy, but I didn’t let that dampen my spirit.

I was nervous initially because this was my first run since my second Half Marathon, when my knee problem was at it’s roughest.  I completed the race, with a good time…but could barely walk when I finished.  I saw a Physical Therapist when I returned home, and we discovered that it was actually a weak left hip that was causing my knee issues.  Total bummer.  Could have been alot worse, though.  After giving me a strict regimen of hip strengthening exercises, and taking a whopping *3* weeks off from running….I was more than ready to get back into the swing of things.

I was with the beginner group today, and it was SO awesome to see all these people ready to learn how to run.  They were so excited, and a bit scared.  I think runners often times forget how intimidating running can truly be.  I remember when I first started running.  It seemed like this big impossible thing, that I was never going to be able to do, and especially not enjoy.  I remember breathing so hard that I literally thought a heart attack was imminent, and approaching at any second.  You just keep going though, adding on a bit each time.  Speeding it up, running longer…becoming stronger.  Running then somehow transforms from being this dreaded, hard, bad thing….into a therapeutic, enurance building, awesome ride.  I think if everyone knew the feeling of a good strong run, then 99.9% of the population would be running on a daily basis.  *THAT* is why I did this program.  To show these people how to turn it into a positive thing.

All that being said, I think the group did amazing today!  We had over 60 people with very little advertisement, so it is sure to grow!  We do group runs every week, and give our groups homework which they complete during their week on their own.  This can range anywhere from documenting runs, to cross training, etc.

I definitely got my workout in!  I would speed up and try and motivate the people in the front….then run back to the middle…and the back.  After doing this several times, I had worked up a nice sweat!  Boo yah.  Also, NO KNEE PAIN.  Granted, I certainly wasnt out there today to bust out records or even run at what would be considered my “normal” pace….but I did alot of running, and no pain.  I was/am elated.  PS, everyone in my group completed the full 3 miles today without stopping.  Rockstars I tell you, they are rockstars!!!  I cannot wait to help them see improvement over the next 6 weeks.

After the run, I was starving and in need of some veggies for dinner.  Stopped by the store on the way home to try and get inspired, and decided to go for a pasta dish!

Sautéed some veggies in a pan with a tablespoon of oil, and some salt/pepper:

Once they were good and soft, I added some broccoli and spinach to the party:

Combined it with what is now my official favorite spice:

This “spiked” it up (ba dum chiiiiiiii) when I added the pasta.  Transfer to your favorite dish…and perfection!

Mmmmmmm. Passssstaahhhh.

Sam was eyeballing the pasta as I inhaled it.  Jealous pup?!?!?!  Yes…he got a bite.

On that note….the weekend is over.  How does it always happen so fast?!
