Rahhhh, Rahhhh, Ooh Laa Laa!

Well, my first run back today went great.  Absolutely NO knee pain!!!  More in just a bit.

Since it is Sunday…it meant only one place for breakfast!

Cracker Bizzle!  Nothing like a big bowl of their oats (plus pecans and a sliced nana) and their lovely Bran Muffin.  Who says you can’t go somewhere like this and eat healthy?!  Met Heather there who is going to apply for our city’s version of Biggest Loser (I get to be the trainer..but not the mean kind.  😉 )

She even brought a notebook to get all the information on applying, etc….talk about dedication already.  Heather, you are going to rock it girl!!!

Fast forward to lunch where I totally regressed back into my elementary days.

Almond Butter and Peach Jam sammie with a hugh jass apple, and some veggie stix.

Deeeeeee-licious.  Sometimes (or always) it is nice to embrace the inner child.

I love you because you are part of the weekend, but MUST you put me in misery with weather like this:

I swear that Garden Gnome keeps moving closer and closer to the door.  Which just HAPPENS to be right in front of MY room.  *shutter*  And why is he randomly doing the Nazi salute?!?!  A) Who makes these things and B) Why does my mother buy them?!?!?!

After lunch it was time to start prepping for my Running Program that I am coaching at my other gym.  This program gears participants for an annual 5K in the area, and is divided up into three groups.  Beginners, Intermediates, and Advanced.  I was stoked to finally be able to gear up in full running attire!

It was a smidge rainy, but I didn’t let that dampen my spirit.

I was nervous initially because this was my first run since my second Half Marathon, when my knee problem was at it’s roughest.  I completed the race, with a good time…but could barely walk when I finished.  I saw a Physical Therapist when I returned home, and we discovered that it was actually a weak left hip that was causing my knee issues.  Total bummer.  Could have been alot worse, though.  After giving me a strict regimen of hip strengthening exercises, and taking a whopping *3* weeks off from running….I was more than ready to get back into the swing of things.

I was with the beginner group today, and it was SO awesome to see all these people ready to learn how to run.  They were so excited, and a bit scared.  I think runners often times forget how intimidating running can truly be.  I remember when I first started running.  It seemed like this big impossible thing, that I was never going to be able to do, and especially not enjoy.  I remember breathing so hard that I literally thought a heart attack was imminent, and approaching at any second.  You just keep going though, adding on a bit each time.  Speeding it up, running longer…becoming stronger.  Running then somehow transforms from being this dreaded, hard, bad thing….into a therapeutic, enurance building, awesome ride.  I think if everyone knew the feeling of a good strong run, then 99.9% of the population would be running on a daily basis.  *THAT* is why I did this program.  To show these people how to turn it into a positive thing.

All that being said, I think the group did amazing today!  We had over 60 people with very little advertisement, so it is sure to grow!  We do group runs every week, and give our groups homework which they complete during their week on their own.  This can range anywhere from documenting runs, to cross training, etc.

I definitely got my workout in!  I would speed up and try and motivate the people in the front….then run back to the middle…and the back.  After doing this several times, I had worked up a nice sweat!  Boo yah.  Also, NO KNEE PAIN.  Granted, I certainly wasnt out there today to bust out records or even run at what would be considered my “normal” pace….but I did alot of running, and no pain.  I was/am elated.  PS, everyone in my group completed the full 3 miles today without stopping.  Rockstars I tell you, they are rockstars!!!  I cannot wait to help them see improvement over the next 6 weeks.

After the run, I was starving and in need of some veggies for dinner.  Stopped by the store on the way home to try and get inspired, and decided to go for a pasta dish!

Sautéed some veggies in a pan with a tablespoon of oil, and some salt/pepper:

Once they were good and soft, I added some broccoli and spinach to the party:

Combined it with what is now my official favorite spice:

This “spiked” it up (ba dum chiiiiiiii) when I added the pasta.  Transfer to your favorite dish…and perfection!

Mmmmmmm. Passssstaahhhh.

Sam was eyeballing the pasta as I inhaled it.  Jealous pup?!?!?!  Yes…he got a bite.

On that note….the weekend is over.  How does it always happen so fast?!

Just call me Bob?!?

Hello Tuesday!  I think I like you better than your pal, Monday.

I started my breakfast last night, and used my Chia Seeds again…this time in a cereal/fruit bowl mix!  I wanted to let the “sauce” set up overnight…so I got to work:

Nothin’ like a new jar of AB to make me happy.  😉

The “sauce” was a mixture of:

  • 2 TBSP Chia Seeds
  • 1/2 Cup Almond Milk
  • 1 TBSP Almond Butter
  • 3 TBSP Greek Yogurt
  • 1 TBSP Polaner Natural Peach Jam

Let that soak overnight, which turns into this:

Combined two of my favorite cereals…

Stuck with the Mango theme by cutting into this juicy guy…

I then combined the fruit with the cereal (1/2 cup, each)

And on went the pudding!

I was a fan.  Chia Seeds…you guys are two for two.  Sam seemed to enjoy it as well.

He is getting SO furry…groomer.  ASAP.  Tyler, seriously…get on this!  *sorry, ignore my rants at myself*

After breakfast I answered some emails (I love getting emails guys!!!  Thanks so much for sending them, and be patient as I tend to write novels and/or lose them in all the Facebook junk that comes to my email…I will respond, I swear!!!), and then headed to meet my dear friend Natalie at Tomy Thai to discuss a verrrrry exciting summer program I will be helping with.

Is she not adorable?!?!?!  Love Natalie!!!

We needed to talk business, but first and foremost, we needed to order lunch, right?!?!  😉

Hmm, sorry for the blur.  I must have been in a Thai-Food-Frenzy.  They brought soup and crunchies to start!

I ended up getting the Tomy Thai Fried Rice (extra hot, please) with Veggies:

Even though this was a “smaller” lunch portion, I still had tons of leftovers for work tonight (sah-weet!)  The best part of this dish, aside from the veggie goodness, was the abundance of pineapple!!!  So good, and such a good flavor addition to the spicy rice!  Yum, yum.

So, it was onto business talk!  Our city is going to be sponsoring a “Biggest Loser” competition this summer complete with teams of two competing in an 8 week program to lose weight and get healthy.  I GET TO BE BOB!!!!!  How friggin’ exciting is that?!?!  I am pumped!  Hank (who couldn’t make it, boo!) and Natalie are over the Crazy 8’s race, which draws a TON of people to this area!  Heck, even the Kenyans come down and run with us!  😉  So the competition will occur 8 weeks prior to the race (8K).  Notice an 8 theme going on?!?!  The finale will be held live after the race, with a live weigh in/result.  Amazing?!?!  Yes.  Everything is totally still in the planning stages, but I am so excited to get started on this!

Well, time to get my workout on!  I am going to tackle some time on the machines, and do some weights!  Later bloggies…happy Tuesday!

Millet Kind of Mornin’

Good morning bloggies!  I know, technically it is more like lunch time….but I just had a nice little nap session with the pups, so it seems morning-esque to yours truly!

Woke up at crack thirty this morning to teach Spin at my gym in Johnson City.  The class is finally picking up steam, and we had 9 people today which made me so happy!  It is so much easier to teach to a larger class versus a smaller one.

Came home thinking about breakfast, and decided to try my new bread I picked up at the Earth Fizz:


What exactly is millet, you ask??  Well…here ya go.

I toasted up some bread, topped one slice with Natural Peach Jam, and the other with AB and some millet granola…in keeping with the theme of course.

Also diced up a mango for fruit goodness.

It was good times!  That bread is so moist and yummy, it almost has a poundcake like consistency!  Bravo again, Fitnessista.  Her choices always rock my socks.

I also forgot to post dinner last night while at work!  *gasp* So here is a recap:

Nuked a sweet potato, then topped it with some veggie baked beans!

Easy.  Simple.  Delicious!  It was the perfect dinner to heat up at work!  Yum!

Back To Reality.

Well, I knew I was back home when I woke up to this:

Luckily, I also had these pups to remind me of the good aspects of Tennessee life.

I woke up with a bare kitchen, and threw together a yummy breakfast with the last of my supplies!  It was a Kashi waffle kind of morning.

“Sauce” was Almond Butter mixed with Natural Peach Jam

Also had an actual peach to go with the peach sauce.  Ok, so it was a peachy sort of morning as well.

It was then definitely time for Earth Fare!  It was good to be back in MY yummy food mart.  Loved the Floridian ones, but I do love me some Earth Feezy quite a bit.

Pretty soon I had a buggy full-o-fun:

I’ve gotten several questions about my grocery bill.  Here is some advice:

  • Think about staples….it is so fun and tempting to go and buy all “fun” food and snacks, but buying alot of meal creations will make your money stretch that much more
  • Buy produce elsewhere!  Rarely do I ever get produce from Earth Fare…it is way too expensive.  In this case, I went right next door to Kroger for the veggies/fruit
  • Make. A. List.  Going into a store like this with no list is like setting a 10 yr old free in Toys-R-Us on a sugar rush.  Not a good idea.  Stick with what you need
  • Buy big!  Get items that will last several uses or make several meals/snacks
  • Have fun!  Grocery shopping should not be a chore, it should be FUN!  I swear I have the time of my life in these places.  Try something new!
  • Coupon Hunt!  Earth Fare always has a large selection of coupon books up front to loot through, and save money.  For example…I got $1.00 off of EACH of my Almond Milks, making them around .98 cents each!  Score!

My total for today (both stores combined): $76.49

This may seem steep, but it will make at least 20+ meals.

Speaking of meals, it was time for lunch!

Yay for yeast!  haha  I had seen this used on several of my favorite bloggies, but when Fitnessista said it tasted like cheese…I was sold.  Also toasted up a Whole Wheat Pita Pocket for dippage:
