Chocolate Oats

Boy was today’s breakfast a winner winner, chicken dinner!

Started off the EARLY 5:00am morning with a nice mini Clif to jump start me for Spin class…

Headed to an almost full spin class, which always makes my heart happy.  We had to open the door by song 3.  I know it’s bad when the mirrors/windows not only fog up…but begin to sweat themselves.  Muhahahahahaha.  Finished off the gym sesh with my hip strengthening/stretches for the ‘ole knee, and some tricep work.

Headed home, and was inspired by Emily to make some chocolate oats.

Started out by trying my new coffee press, with some coffee that was given to me as a gift a couple of months back, when I was doing my Student Teaching in third grade!  The staff knew I had a slight obsession with pumpkin.  Which by slight meant that I would have eaten an old dryer sheet had it been coated in the orange stuff. 😉  I miss those little guys…this coffee was a nice reminder:

While the water was boiling, I got to work on the oats..

I wanted to give these oats a real chocolate punch, so I added unsweetened chocolate almond milk, as well as a scoop of protein powder to the normal oats mix.  Once done I topped it with a sliced nana, some dark chocolate in the middle…almonds, and…..more chocolate.  Noticing a theme?!

Not going to lie.  I think this should be illegal…it was THAT good!  Add some coffee with my favorite mug..

*cue the Foldgers “best part of waaaaaaakin’ up” theme*

Who says you can’t have chocolate for breakfast?!  Who even makes those rules anyhow.

Time for some cleaning, emailing, and to head to a meeting later about Biggest Loser!!!  I am so stoked to get more information on this!

PS…….Lady GaGa’s Telephone is officially released…what do you think?!?!  I adore it…then again, I am a bit biased.  😉

Surprise Run!

Well, today was interesting to say the least.  A seemingly peaceful nap with the pups…woke up, got ready for spin…headed outside…started my car.  Started my car.  ………..tried to start my car.  I was out of gas!!!! I had 20 minutes to get to the YMCA and needless to say panic mode was setting in instantly.  I called Kim in a panic, and she started to come get me, when I realized there was a gas station about half a mile from my house.  I took off into a FULL OUT sprint towards the gas station.  It was hilarious.  Got to the gas station, feeling like I was on some cracked out challenge on “The Amazing Race”.  Running BACK to my house with the gas can proved hilarious, as I was trying to run at my fastest speed while not spilling the gas all over myself.  Got back, gassed up the car…and SPED like a maniac to the gym.  I swear I was going 80 the entire way, and a 15 minute drive turned into a 8 minute NASA-like speed show.  I was darting in and out of traffic like there was an asteroid heading directly for Earth.

I MADE IT.  Barely, but I made it.  Oh the things I do for spin.  Sheesh.  I don’t think I even exhaled until class was over!

When I got home I needed a fun lunch to calm my nerves.  😉

It was waffle time!  I added some Golden Kiwis (which were a bit too ripe today, boo!)

I made a quick topping that was a mixture of some Polaner Natural Peach Jame and some Almond Butter…

A) Car Trouble stresses me out

B) We eat with our eyes first

Which meant it was time for a Waffle Face.  😉  Threw in a banana mouth, and some dark chocolate facial features…

Sorry Sam, but chocolate is bad for dogs.  😉

After the STRESS of running out of gas (fail), having to RUN to the gas station (EPIC fail), spilling half of it running back/being 5 minutes late for spin (EPIC-EST FAIL!), this lunch was able to de-stress me nicely.

Headed to work complete with snacks for the evening!

I also brought dinner from home which I started making early.  It was my first experience with Tempeh!  Time for a wrap!

It was also my first experience with these Whole Spelt wraps…super yummy!!!

Started by spreading some of Amy’s re-fried beans on the wrap…

I then browned up the tempeh and layered it across (there may have been a TRACE of red pepper flakes as well.  😉  )

I topped with lettuce and natural cheese…and wrapped that sucka UP!

Once I was at work, and hangry, I paired it with some new hummus chips, and carrots:

Well, time to close the YMCA down and head home.  Have an awesome rest of the night bloggies…I am coffee shopping tomorrow for my new French Press!!  Can’t wait!  Still looking for suggestions, hint hint.  Something flavored perhaps?!

Knee Update.

Well, while I thought my knee was doing semi “ok” it has flared up in a maaaaajor way this morning, almost to the point where I couldn’t finish spin class.  I have bitten the bullet, and am going to the doctor (Physical Therapist) today to have him look at it…so wish me luck!  I am hoping beyond all hopes that it is not something that requires me to take “time off” because working out = Tyler’s paycheck (or lack there of).  😦  We shall see.  On to more inspiring news…such as the mini clif I inhaled at crack thirty in preparation for 5:45am spin.

Headed to spin, felt fine for the first 40 minutes or so, then the knee began killlllllling me.  It is the only time I have ever been counting down the minutes until class was over.  Depressing, blah.  Theres no swelling, and the pain is below the left knee…but it feels like it is deep inside.  I can only describe it like a piercing feeling that just jabs harder when I put pressure on the foot, go up or down stairs, or do the pedaling motion in spin class.  Sad times indeed.  Hopefully the Doc can tell me what is going on later.

Came home and prepared a breakfast that made me almost completely forget my knee pain.  Yep, it was that yummy.  Started with the Millet-lovin’

Then made a nice bath for it to swim in, pre-pan.

Soaked the bread in the egg mixture, and then put those babies in the pan!  (forgot to add the massive amounts of flax seed to the above picture. )

While the French Toast browned on both sides, I chopped up some strawberries and a huge mango:

Also heated up the STAR ingredient in the microwave…

Ashlie gave me this bad boy last night in class, and I could not wait to use it (obv. 😉 ) It is so fun to finally meet a blogger.  Crazy that we lived so close.  We are already planning Tampa trips (your coming too, Krucker and Emily) and visits to Earth Fare!!!  She also has a VitaMix that we get to play with!  I am so stoked!  Back to the toast. 🙂  I browned it up, and smeared the heated coconut butter on top.  Are you drooling yet???  Because I am, and I have already EATEN it.

Dear.  Sweet.  Big Bird.      This was amazinggggggg!  I have to get a big jar of that coconut butter, stat.  Hurry up and get back from Florida, Ashlie…we have some trips that need to occur. 😉  Sad times followed when I realized my mini jar was already gone!

I’m tempted to do the world’s smallest “Oat’s In A Jar” with this. haha

Also, Sam was craving a mango.

And yes, he got it.

Ahh, to live the lives of dogs.  Look at them!

On that note, it is time for lunch.  I am meeting my dad at one of my favorite Mexican places, Salsaritas!  I refer to it as a “Mexican Subway” because it is basically a build your own burrito joint.  Totally yummy.  Check it out, here.

Florida Sun!

Ok, I am totally moving here.  Look what I woke up to

I think it became officially Florida when there was an ORANGE TREE in the backyard.

I am moving here.  It’s official.  We are staying with Kim’s family…and they stocked up on yummy organic food just for us.  Total love!

Oatmeal and toast it was!  I topped the oatmeal with the Almond Butter plus my homeade trail mix.  It was a mix of Kashi Strawberry Fields, Raisins, Soynut Trail Mix, and the LAST of my Dark Chocolate Covered Edamame Beans

Even in Florida I can make a mean bowl-o-oats.

Oats, Eziek, Smart Balance, Coffee.  YUM!

We hung out for a while and before we knew it.  Lunch was calling.  (ok, maybe we slept in slightly.)  😉

We were then off to have a lunch at one of Kim’s favorite local Italian places…

We started carb loading for the race a little early. 😉

They had tons of tasty looking options..

Grilled Eggplant….yes, please!

This combo was absolutely amazing.  The melty cheese, pesto, peppers, and eggplant made a fantasmic combination!  I love these little local places.  Emily was in full force blogging and carb-loading as well.

After lunch it was time for stereotypical Florida tourist fun!

All I was missing was a Hawaiian shirt, big floppy hat, and fanny pack.  I am seriously in love with this weather!

Did I mention I was a major tree hugger.

Oh yes, I am rocking the flip flops.  Took a while for my feet to re-adjust to them!  It was like a body trying to reject a virus!  Don’t worry, it eventually caved and accepted the open toe-ness.

Snacked on my favorite while waiting on dinner…

Now we are back at Kim’s house waiting for a delicious dinner (I smell it wafting in my room which is a clear sign that I need to be tracking down the whereabouts of this amazing odor.)

We are going to do my favorite activity post dinner.  GROCERY SHOPPING!  Publix and Fresh Market are on the agenda.  Hey you Clearwater/Tampa peeps, where else do I need to go?!?!
