Hello, Summer.

Where have you been all my life?!?!

Seriously, it was like 90* today, no exaggeration.  In fact, I am blogging outdoors!!!

And there may be some snackage involved.

The last of my Sunspires (sad day.) and some dried unsweetened pineapple.

Lets rewind to the un-holy time of 5:00 am when I was awoken by a screeching alarm for Spin class.

We packed the joint out today, and even had people who didn’t get in! (sorry, Steph.)  Aweeeeesome class, which jump started the day into greatness right then and there. 😉  After Spin, Steph and I headed to our home away from home for some quick oatmeal before returning back to the YMCA for Total Body HIIT.  I got to introduce Denise and Ashley to chia oats!!!  Pretty epic stuff.

There was also an oat FAIL, when we left Ashley’s in the microwave for too long.

All in all, a good oat experience, even with the volcanic-esque eruption taken into account.

Headed back to the YMCA for some Total Body HIIT!  My friend Ginny teaches on Friday, and I wanted to totally score some moves, she is a beast!!!  I love going to other instructors classes just to get new ideas and inspiration from class.

I think the Good Friday excitement was proving to be too much.  😉

I was obviously working hard in class.

After class, it was so gorgeous that we decided to walk to the Starbizzle.  Steph supplied us with some cereal to sustain us for the long, grueling, 50 ft. walk.  😉

This picture fell into the category of “of course this isn’t going on the blog.”

And two Venti iced coffee’s later….I had reached my zenith.

The walking ventures continued…

As we headed to my favorite bakery known to mankind.

Literally, the most tiny and unique bakery you will ever encounter…also the absolute most delicious.

The cupcake counter was challenging me.

And I think we all knew who came out victorious.

Word to ya motha.

Does anyone else have these little hole in the wall type places that are a must visit? It’s times like these that calorie counting goes out the door, and my true inner sugar lover comes out in full force.  MODERATION is everything….it was only the size of my palm.  Had I not had it, I would have been in misery all day long.  Pick your battles wisely, and you will always come out on top……blogger boy oath.

We finished poking around downtown, and eventually headed home.  I only wanted one thing for lunch.  Big.  Green.  Monster.

This mamma jamma contained:

  • 2 Handfuls o’ spinach the size of my face
  • 1 diced Pear
  • Ice
  • 1/4 Cup Oats (plus a sprinkle on top)
  • 2 Scoops Chocolate Natural Whey Protein Powder
  • 1 Cup Almond Milk

Blend…..enjoy.  There also may have been some mint chocolate involved.  What can I say.

You should be proud of the fact that this bar has been spread out over 4 days, and I didn’t engulf it in one sitting as I have been known to do in the past.

A nap was in order, but not obtained.  Instead, manual labor…and computer trouble shooting for a family member prevailed over sleep.  FAIL!

Worked up a nice appetite and hit up Salsaritas for dinnah!

I had the Taco Salad (on a plate instead of the ginormous chip mold) with a FEW chips on the bottom, and then as much veggies as could possibly be assembled:

Call the miner’s.  I had struck veggie gold!!!

90* weather makes Ice Cream (or in my case, FroYo) mandatory….right?

Small Vanilla FroYo with Strawberries.  May have snuck a couple of bites of the Padre’s Coconut Ice Cream.  Heaaaaaaven.

Good afternoon my little bloggin’ buddies.

It’s Friiiiiiiddddaaaaaaayyyyyy!  Anyone else excited?!?!

My day started in typical Friday fashion, with the horrific noise of the alarm clock @ 5:00am.  *shutter*

Look, even blog boys can have bad hair days!

Pardon the disgusting mirror and/or the bags under my eyes.  It was 5am, ok?!?!?!  😉

We.  Kicked.  Butt.  This.  Morning.

Full spin class + new CD (with Bieber lovin’) yielded a sweat factory!  It was seriously one of the most intense CD’s ever, I think because there were alot of standing sprints, thanks to Paramore.  They are always good for a sprint song, whenever you need one…….or eleven.  😉

Also, can I just say that I was so thankful to have spin this morning, because my legs are sooooooore.  That rarely ever happens, but working out lower body yesterday morning, then KILLING it last night in HIIT provided me with the worlds tightest hamstrings, and some achey quads.  Spin did the trick though.

Munched on this en route to the gym…but honestly, didn’t even make it to the front door it was gone so fast.

Maranatha Dark Chocolate Spread (aka FROSTING, right Ashlei?!)  Which was smeared on an Omega 3 waffle:


Had a nice sweat session at the gym, then headed back and was extremely lazy with the pups.  Oatmeal was in order, and was the classic chia standby!  This time I spiced things up by adding some dried kiwi.

I’m telling you.  Nuke a banana for two minutes in the microwave, THEN cook it in the oats.  Whomg.  Seriously yah-mazing.  Makes it so thick and creamy!

I went to my second meeting today about doing a “Biggest Loser” style program that our city is doing this year.  It will tie in with one of our biggest races, The “Crazy 8’s” 8K, and will take place eight weeks prior to the race.  I get to be the trainer for the teams!!!  I am so excited.  Never in a million years did I think I would ever be a “trainer”!!!  Especially when I was tipping the ole scales at 318!!!!  Hopefully I can motivate some people into changing their lifestyle!  I will have more info very soon, and will even be creating a seperate blog for program, which has officially been named “Eight to the Eight’s”  We start the application process soon, and are meeting with local tv/radio/newspaper to start advertising.  It’s going to be very exciting!!!!

After that meeting I met the Padre for lunch at Salsaritas:

Everyday there is a “special” and today it was pizza!

How can I resist a Friday-themed meal?!?!  C’mon.

Started with a whole grain tortilla:

Then added a mountain of glee which included:

  • Refried Bean Base
  • Tomatoes
  • Lettuce
  • Black Beans
  • Cheese
  • Zucchini/Onions/Squash

I was able to somehow resist the chips.  Barely!  😉

Needed a buzz to keep me going….it was the standard venti iced coffee with skim mizzie.

Also, at Target I saw an entire BIN of my favorite candy.  I had to restrain myself so I wouldn’t just start opening/eating all of these directly in the middle of the store:

This was like an alcoholic being taken to a booze themed Amusement Park!

Picked up a new and tasty cereal from Target which was quickly munched on for snackage:

Made a simple little parfait with caramel Oikos, and some strawberries:

Cinnamon, anyone?!?! haha

That being said…..time to go enjoy some Friday goodness.  Have a great one!!!!!

Indian feast tonight with Maggie!  So stoked, I have missed that little gal.  I have my marching orders from Fitnessita to try a lentil or chickpea dish….I also spotted one last time that was cauliflower based that I might try.  Any other Indian suggestions?!?!

Breakfast Two-A-Days

C’mon…..you know you want breakfast twice in one day.

My day began early when I met Kim and Emily at the gym for an amazing weight session!  Whipped up a protein shake to chug…half pre-gym, and the other half post.

Got some good weights in:

  • Chest Press
  • Bicep Curls
  • Tricep Dips
  • Deadlifts With Row
  • Shoulder Raises (lateral/front)
  • Squats
  • Walking Lunges
  • Side Squats (With Band)
  • ABS (which were forced upon my by Krucker)

Where I promptly came back to the hizzouse (Starbucks may have been somewhere involved during the in between time…but who am I to tell.) for my first breakfast of the day…Chia Oats!

  • 1/2 Cup Oats
  • 1 Cup Almond Milk
  • 2 TBSP Chia Seeds
  • 1 Truvia Packet

I made them on the stove-top today!

Topped these bad boys with a big dollop of Almond Butter (no drizzle today…wanted the blobbage), and some fantasmic mocha marble trail mix:

Today was so gorgeous outside, which makes me extremely happy.  Like, to the max.  Ran some errands and picked up part of Maggies Birthday present!  We are celebrating tonight at Stir Fry, can’t wait!!!

Came home for breakfast round two (aka lunch), because quite frankly….it’s exactly what I wanted.

Made a strawberry sauce by dicing up some berries, and cooking them over medium heat with some Polaner All Fruit, and some chia seeds to thicken it:

Once the berries popped, I let the sauce cool, and then topped the waffles. Yummmmm-o.

Sam has been lazy all day.  Look at this pose:

Well, I have thought about it….

…and you still don’t get to know yet.  😉

Just call me Bob?!?

Hello Tuesday!  I think I like you better than your pal, Monday.

I started my breakfast last night, and used my Chia Seeds again…this time in a cereal/fruit bowl mix!  I wanted to let the “sauce” set up overnight…so I got to work:

Nothin’ like a new jar of AB to make me happy.  😉

The “sauce” was a mixture of:

  • 2 TBSP Chia Seeds
  • 1/2 Cup Almond Milk
  • 1 TBSP Almond Butter
  • 3 TBSP Greek Yogurt
  • 1 TBSP Polaner Natural Peach Jam

Let that soak overnight, which turns into this:

Combined two of my favorite cereals…

Stuck with the Mango theme by cutting into this juicy guy…

I then combined the fruit with the cereal (1/2 cup, each)

And on went the pudding!

I was a fan.  Chia Seeds…you guys are two for two.  Sam seemed to enjoy it as well.

He is getting SO furry…groomer.  ASAP.  Tyler, seriously…get on this!  *sorry, ignore my rants at myself*

After breakfast I answered some emails (I love getting emails guys!!!  Thanks so much for sending them, and be patient as I tend to write novels and/or lose them in all the Facebook junk that comes to my email…I will respond, I swear!!!), and then headed to meet my dear friend Natalie at Tomy Thai to discuss a verrrrry exciting summer program I will be helping with.

Is she not adorable?!?!?!  Love Natalie!!!

We needed to talk business, but first and foremost, we needed to order lunch, right?!?!  😉

Hmm, sorry for the blur.  I must have been in a Thai-Food-Frenzy.  They brought soup and crunchies to start!

I ended up getting the Tomy Thai Fried Rice (extra hot, please) with Veggies:

Even though this was a “smaller” lunch portion, I still had tons of leftovers for work tonight (sah-weet!)  The best part of this dish, aside from the veggie goodness, was the abundance of pineapple!!!  So good, and such a good flavor addition to the spicy rice!  Yum, yum.

So, it was onto business talk!  Our city is going to be sponsoring a “Biggest Loser” competition this summer complete with teams of two competing in an 8 week program to lose weight and get healthy.  I GET TO BE BOB!!!!!  How friggin’ exciting is that?!?!  I am pumped!  Hank (who couldn’t make it, boo!) and Natalie are over the Crazy 8’s race, which draws a TON of people to this area!  Heck, even the Kenyans come down and run with us!  😉  So the competition will occur 8 weeks prior to the race (8K).  Notice an 8 theme going on?!?!  The finale will be held live after the race, with a live weigh in/result.  Amazing?!?!  Yes.  Everything is totally still in the planning stages, but I am so excited to get started on this!

Well, time to get my workout on!  I am going to tackle some time on the machines, and do some weights!  Later bloggies…happy Tuesday!

Mondays are insane!!!!  My Monday actually began last night, when I got some advice from Jill about what to do with my new Chia Seeds:

As I see the chia pudding post above, you HAVE to do it and put it in your oats; 1/4 cup almond milk and 1 tbsp chia seeds. wisk and let set on counter for 20 min, then pop in the fridge overnight. Add to your oats in the morning and they will be super creamy, and full of Omega 3’s!!

Soaked those babies in the Almond Milk, and stuck them in the fridge to work their magic overnight!

Did I mention that I pink fuzzy heart Almond Milk?!?!

Please overlook the outfit.  I was dressed for bed, ok?!?!?!?!

So while I slept, the chia worked it’s magic powers.  Woke up this morning early and headed to my first of four (yikes) classes of the day!  Yoga was first, and the kids were adorable, as always.  We are really getting into some complicated/tough poses for an adult, let alone elementary kids…they are doing great!

Came home to find that the chia/milk mixture had thickened beautifully!

I added this mixture to my friend, Mr. Quaker:

Coincidentally, these were not your everyday oats.  I had an almost empty jar of Almond Butter, which meant only one thing!  Oats In A Jar!

It was the normal oat process.  With added dried berries for yum factor.

Made the oats, and then I added them to the AB jar…plus the Chia mixture.

YUM-tastic.  Just when I thought oats couldn’t get any better!  The Chia seeds gave the oatmeal such a creamy consistency, it was fabulous!  Bravo, Jill.  You know your stuff sister.

Did I mention that my house is slowly becoming overpopulated with pups?!?!  My brother is in town, which means his Boxer, Abby, is staying with us!  Check this big girl out:

She fits right in with the rest of the crew.

Poor Sam just keeps to himself, and tries not to get trampled by the dinosaurs

After I finished breakfast, and tended to the pack of wild beasts…it was off to the YMCA for Express Sculpt.  I try to incoroporate a full body workout in 30 minutes using basic equipment.  Here was todays agenda:

  • Heavy Bar Squats
  • Heavy Bar Chest Press
  • Leg Lifts (with tons of holds and circles)
  • Bicep Curls with Medium Bar
  • Walking Lunges with Medium Bar
  • Overhead Press/Sqaut Combo with Medium Bar
  • NO Weight/Equipment Arm circles (shoulders…killllls after 100 or so)
  • Abs/Cooldown

’twas nice.

After class I came home and threw together a Mexican inspired lunch!  Started out with a whole wheat mini pita pocket, sliced her open…

Then added some beans/salsa/cheese:

Baked those babies until they were crisp.  In the meantime, I steamed some broccoli/cauliflower to have on the side.  Once everything was browned and steamed, I plated up the open face Mexican pizza, and then veggies smothered in Salsa and Nutritional Yeast:

Finished off with an Attune and a big green pear!

Well, it is time to go do some High School Yoga, and then rush over to the YMCA for Monday night Spin.  Made a new CD, I will give ya the tracks tomorrow.  Some good jams going down! 😉

What a Sunday!

Hello bloggies!  What a day I have had.  Sorry it took so long to blog, but Maggie and I headed to Knoxville for the day!

My day started off amazing with my favorite breakfast spot:

If this doesn’t entice you, then little will…

The grub wasn’t half bad, either.  😉

Had to jump start with the coffee buzz.  Moved onto something a wee bit more substantial.

Bran Muffin, Sliced Nana, and my precious oatmeal!  Topped with a truckload of pecans.

Perfect start for the day.

I got ready, packed all my healthy snacks…and headed to meet Maggie.  We were Knoxville bound for Alice In Wonderland, IMAX style!

Chowed down on an apple and some grapes.  Also busted out my new Nalgene with my sticker from Florida!

We made it to the theater with little time to spare!

Going to the movies meant two things today:

A) 3D glasses

B) sneaking in lots of yummy movie treats.

The LAST (sadness) of my dried Kiwi, a new Raw bar (honestly….wasn’t a fan), and two cuties!

Movie was great.  It was so amazing getting that IMAX experience.  I think they could have shown two hours worth of grass growing in 3D and I would have been happy.  The screen was giganourmous.  Oh yes, it’s a word.

We met our friend Jessica in Knoxville, and her boyfriend and amazingly cute son that Maggie and I instantly adopted.  We became Aunt and Uncle for the day.  The fun kind of Aunt and Uncle that loads the kid up on sugar, lets them do as they please, then drops them off with the parents as a crazed wild lunatic.  Parenting.  Isn’t it fun?!

We went to another Hibachi place for dinner (I am two for two on those this weekend!)

Started with a salad with ginger dressing, and the classic soup!

Maggie and I both got the “Hibachi Vegetables” and boy…they didn’t skimp up on the veggies!

Here was my portion, that was large enough to feed the entire TABLE.

Needless to say I have enough leftovers for several fun meals in the next few days.  😉

Also, there was an EARTH FARE in this shopping complex.  You know we had to stop.

A simple grain that has taken the blog world caught my eyes…and was on sale.  I decided it was time to give it a go.

Ch, Ch, Ch, Chia!

What do you bloggers do with Chia?  I know oatmeal, of which I will be trying first thing in the a.m., but what are some other good Chia inspired recipes?!?

Maggie and I continued assuming our role of fun Aunt/Uncle…

And got my favorite dessert ever.  Vegan.  Carrot.  Cake.  Joyness.

Drool-WORTHY!!!!!!!!!!!  Moist and delicious.  How they make it Vegan I will never know, as it always just tastes like the most glorious cake you could ever imagine.

While I need groceries badly, I just picked up some fun items…the bulk of my shopping will be done at MY Earth Feezy tomorrow!

I haven’t saved a zebra yet!!!  I swear these Endangered Species chocolates are more addicting than Beanie Babies, and way more edible.  😉  Also got two of my most favorite bars….Raw Choco-Coconut.  Hands down the best bars EVER!  And the Chia.

Ok guys, what do I need to be doing with these?!?!  I know there are tons of ideas out there.  Lets hear em!
