Wednesday Blur!

Anyone elses day seem to zap by in an instant?!

From the craziness that was work, to zumba, to cleaning this DISASTER area of an apartment…I feel like I have been shot out of a cannon.

Lets mentally rewind to breakfast when something cold was in order:

For me, breakfast is always a “will this take me 3 minutes or less to prepare/eat as I run out of the door completely frazzled and late” kind of question.  Lets face facts…time management is not my strong suit, so on days when work comes early…it has to be fast.

Clifford organic cereal, blueberries, and a nana.  Not much simpler than that, eh?

So after this point, where I am frantically trying to pull together an outfit while simultaneousness taking the dog to pee, brewing my coffee and brushing my teeth…..I somehow managed to leave the house in one piece.

Made it to lunch, which was Chefs salad bar with friends!  Gotta love this salad, I think it has evolved from a once weekly event to a 3/5 day a week thing!

The rest of the day was spend listening to literally EVERYONE talk about how Kate (Gosselin…with the litter of children) was going to be in town.

Reality star???  Yes.  Real Star????  NO.

From the FREAKOUTS of people I half expected her to be in some sort of bulletproof enclosure as she was being police escorted down main street!

Fortunately she was simply at a local grocery store for some charity (and I’m sure a teeny bit of publicity for her and her brood)

I have nothing against the woman, I just had a chuckle or two over peoples reaction to her being here.

MOVING on to something more to my liking…lets talk about my favorite Chobani of them all…

Raspberry!  Mmmmm….

And with that being said, I must leave you.  My throat is semi scratchy/sore, and I have already threatened my body that if it gets me sick pre/post/DURING the Lady GaGa concert….that there will be dire consequences.  Luckily my pal Sarah had just the boost I needed…

It is now wayyyyyy past my bedtime, so lets all go to sleep, shall we?  You may be very well reading this in the morning, but hey….if you CAN sleep…I say go for it.  I never turn down a good nap.  🙂

Best. Nachos. Ever.

Yep, those are what are currently cooking up in my crock pot.  This morning before breakfast I decided some slow cooking nachos were gonna be just what the doctor ordered after a long day at work, and teaching class tonight.

(please excuse the DIRTINESS of the Crock Pot!  She wasnt washed very well after her last use on the outside!  Sigh.  I’m a boy, cut me some slack.)

A couple of weeks ago when I got my new crock pot, I immediately called Emily for some inspiration.  She is my go to gal when it comes to recipes.  She gave me a super easy recipe for Chicken Nachos…and the best part was…3 ingredients!  Chicken was the star of the show…

Boneless/Skinless Chicken breasts went in, along with a small jar of Rotel, and a container of salsa..

(this is where I deviated slightly.  Emily had suggested I use black beans…but I didnt have any.  I simply substituted the Rotel because frankly, I had some handy!  I have made the nachos before, and the beans are fantastic in it!)

Added that plus the salsa…and had a hot tub full of yum.

Before I left for the day, had a quick breakfast with my favorite new cereal combination!

See the Keurig popping his little head up in the pic?  I will be blogging about him soon.  He and I are dear, dear friends.

Something about the warm weather.  I consistently wake up craving cold cereal!  Bananas in my cereal have pretty much become a staple in my cereal.  I need to switch back to blueberries next grocery round! (mental note)

Soooo, as the nachos stewed at home I headed for work.  Lunch today was at another local favorite

Today I tried a new item on the menu, because…who can turn down fun items such as these:

I got the grilled variety, and a heaping helping of broccoli! 😀

These bad boys were great!  The slaw and spicey tarter sauce made a great combination.

Fish Tacos make this blogger boy extremely happy…

I clearly hated it…right?

Didnt your mama ever tell you to clean your plate???  😛

When coming back to work I had surprises!  Who doesn’t like surprises???  Especially when they are of the edible variety!

What can I say, the girl KNOWS me!  Needless to say I have been snacking on these bad boys all.day.long.

Mmmmmmm, I ❤ PB Bumpers.  Maybe a bit too much. 🙂

Well…almost time for class bloggies!  I am teaching Total Body tonight, and it is muscle burnout time!  Gotta plan and get it done.  Can’t wait for my nachos tonight!  Take it easy!

Foot RX 5K!

Wow, can I just tell you how good it felt to RUN in a race this morning?!  This was my first competitive race since the Florida Half Marathon, where I was battling some major knee issues.  After some Physical Therapy….stretches…and some major time off from running, I am slowly getting back into it…today being my first race!

This was actually the race that my running group has been training for for the past 6 weeks!  I was the beginner coach, and it was so amazing see my runners progress over the weeks.  Decided that I was going to run the race at a fast pace…and then I could always go back and finish up with some of my group!

Started the day with some pre-run fuel!

Kashi Go Lean Crunch, Nana, Chia Seeds, and Almond Milk

(note to runner’s racers…..milk is glorious, and super delicious.  I love my cereal with a big bowl of skim milk, HOWEVER….race day…it may prove to be your enemy.  Dairy products have a tendency to cause panic in your digestive systems when running on a full stomach.  So on these days, opt for some Almond/Soy/Hemp/Rice milk instead of the cow stuff, k?)

Chia goodness, I tell ya.

What a day for a race!

Weather was perfect!  It was way more crowded than I expected.

Then it was go time!!!

This course is a tough one.  Pretty hilly, and the hills just keep rolling on and on!  There are two especially rough ones at the beginning, and right before the finish line.  Ouch.

It felt amazing to run back at my old speed/pace.  For short races like this I try to do at least an 8:00 minute mile, or better.  I didn’t have my Garmin with me today…so I just ran as fast as I could on the knee.

Not going to lie, this race kicked my booty!  This was the first time I had run “fast” since Florida…and my body knew it!  Bad part was, I kept seeing friends/co-workers along the course….so I felt the extra pressure to perform.  😉

When I turned around the last massive hill, I saw my time….22:08!!!!!  I was stoked!

Also, my dads birthday was a couple of weeks ago…and as a present, I registered him for this race.  He has been slowly running more and more, and I knew he was itching to do an “official” race.  He rocked it out with a 33:20 time!!!

Steph also was along for the ride, and volunteered to help out on the course!  She also got a free shirt, and snacks after.  Not bad for a days work, eh?

Once we had gotten home, and I checked the official chip times/results online…I was shocked!

Early Hump-Day

Good morning Blogville.  Is everyone groovy today?

I started my day off EARLY with a 5:45am Spin class!  At the last minute, Emily dashed in…so I went from being tired/un-motivated, to Super-Tyler (patent pending) in 2.5 seconds, thanks friend!  Did I mention we fly out for Florida in like…24 hours?!?!?!?!  Insanity.

Well, as I was rising from the dead this morning at the very cold and dark hours of the morning, I had a small bowl of cereal as some pre-spin snackage, it was the last of my Trader Joe Berry O’s.  😦


Taught spin with my newest CD, which has this song, which I am now fully obsessed with.  PS, keep those song suggestions for the Half coming, I still need some great ones.  I have downloaded several of your choices!!!  I will post the final playlist tomorrow!

On my way home, I was day dreaming about this guy:

Today’s Batch:

  • 1/2 Cup Oats
  • 1 Cup Almond Milk
  • 3 TBSP of Flax Seed (I cannot get ENOUGH of this stuff in my oats)
  • 1 Truvia Packet
  • (Nuked for 2:50)
  • Diced Nana
  • LAST of my Trader Joe’s Indulgent Trail Mix (Seriously…depression worthy)
  • Drizzle of Almond Butter

That, my friends…is a bowl of oatmeal.  😉

Giveaway Time!!!! :-D

Thats right folks, it’s my first ever giveaway!!!!!  So stoked.  More details at the end of the post!

After my late breakfast and gorgeous weather outside, I decided to go wash my car.  I have been waiting to do this for a while, because it keeps snowing which means the road salt keeps accumulating everywhere.  So annoying.  Apparently every other person in the universe had this idea, and there were literally about 20 cars waiting for the automatic car wash….so I promptly headed home.  I suppose the car can wait for another day.  I decided for a breakfast inspired lunch…

Fruit/Cereal/Yogurt bowl anyone?!?!  This is seriously one of my favorite meals evaaaaah.

Started off by combining the yogurt and pb, then added the cereal:

Then added my fruit.  (Blueberries, Strawberries, and an apple)  There also may have been a heaping sprinkling of cinnamon involved.

Mix this madness up….

And throw in my favorite lunch companion:

You get a pretty darn successful meal.  Dessert was a handful of Trader Joe’s Dark Chocolate Edamame (a MUST try)

Did you notice how my lunch companion made the easy transition into dessert companion?!?!  He pretty much loves any and all food, just like his dad.

Finished that off, and then headed to work!  Working nights on Fridays is good in a sense, because I can pack my lunch and not be tempted by yummy food eating out.  Plus I save some moolah.  When dinner time rolled around, it was a veggie burger to the rescue!  Not just any veggie burger…

Took my favorite combo of an Arnolds Thin bun…Boca Veggie Patty…and laughing cow cheese (light swiss, please.)  Combined it with some broccoli slaw!  Such a good combo!  Yumville.  Paired it with some leftover Panera Veggie Soup (ahhh-mazing) and some carrots/hummus:
