Nachos Part Deux.

Well, what was the verdict on Emilys Crock Pot Nachos?

I came home EXHAUSTED and starving from teaching Total Body….and the aroma of delicious nachos hit me as soon as I walked in the door.

A little blurry, but you get the jist.  The chicken literally shreds itself as it cooks all day in the salsa and rotel.

For the nacho part, I stopped by Kroger earlier where not only did I find these beauties…

But also found my PRECIOUS Veggie Booty (which is scientifically more addicting then any illegal drug) on sale 3 for $5!

These should last me…..ohhhh……2 hours??? hahaha

Anyway, BACK to the nachos….

Chips down…..chicken on top….broiler set to high…..some nice cheesy goodness on top……   “How bad can that be?” (bonus points if anyone knows where that quote is from.  She is my favorite chef!)

Zomg.

I straight up grabbed a fork and ate it off the pan.  It was the good!  (that and the simple fact that I was seconds away from eating the dog I was that starved.)

So needless to say, it was a success.  I wish I would have had the black beans…but it was still GREAT!  Plus I have leftovers for another meal.  Sahweeeeet.

So again, for the record….

  • 3 Boneless Skinless Chicken Breasts
  • 1 Jar Salsa
  • 1 Small Can Rotel
  • 1 Can Black Beans

Cook on low for 7-9 hours, place on chips…enjoy!

It doesn’t get simpler than that folks.

On that note, I am officially calling this day donezo.  Gotta teach Spin at 5:45am, so papaw needs to get in the bed.  ;-)

Annnnnnd, we’re back.

Wow….spare time….to blog!!!  Where was this hour of opportunity yesterday?!?!  Oh thats right…I don’t even think I had time to exhale…let alone blog!!!!  Depressing!  From teaching my normal classes, to subbing for someone for 3 weeks and picking up all her classes….it’s insane!  Did I mention that our city’s version of Biggest Loser aka “Eight To The Eight’s” kicks off FRIDAY?!?!?!  I am about at max capacity in terms of time limits here.  Shew.  It’s a darn good thing I love my job more than life.  ;-)

Started off the day with a 5:45am “Insanity” inspired Circuit Class.  Emily and Kim have been doing Insanity on a regular basis, and I wish I had the time to do it with them!  It is full of awesomeness in every sense of the word…..assuming that is an actual word.  ;-)  Instead of joining them, I have been adding the moves to my classes…which is going swimmingly!  Today’s Circuit Class used absolutely no equipment, and had 12 stations.  We went through each station once, at one minute…and then repeated the circuit.  The last circuit was comprised of 12-1 minute ab workouts.  KILLER!  Also, theres nothing like ending a class with a full out 2 minute suicide drill using the whole gym.  ;-)  They love to hate me.

Walked back home (loving the fact that I am in walking distance) and met my favorite guy for breakfast.

Went very random with today’s mix-ins.  They included:

  • Agave Maple Syrup Blend
  • Chia Seeds
  • Dried Bananas
  • Mocha Madness Trail Mix
  • Almond Butter

Totally random.  Totally delicious.

Have I mentioned my un-dying love for my precious trail mix?!?!

Droolsville.

At this point, it was back to the YMC-izzle to teach “Total Body Low Impact” which is basically a strength/cardio full body workout, minus the intense plyometric/jumping movements that I feature in my other classes.  Again, another sweat sesh!

Seemed to have developed a pattern for today.  Teach…eat…teach…eat.  Therefore…it was time for lunch.

New to me flavor of Veggie Burger…this time, Earth Fizzle brand!  This bad boy was sooooo good!  I put it on an Arnold’s Thin with some Light Swiss Laughing Cow, Spinach…and then pressed the whole thing on the George Foreman…

Melty, cheesy, yum.  Also had some Veggie Booty, and a chopped Honey Crisp!

Well.  It is almost 3:00.  You know what that means, right?!?!?!

I have been having them put my protein powder in the Frap when they blend it!  For half price, you can’t beat it.  Plus they are fully customizable now!  I higgggghly recommend the new Mocha Lite.

Well.  Time for a coffee/protein buzz…and then to my other gym for KidFit…and back to the YMCA for Total Body HIIT.  Man, my body is hating me this week! Do as I say, not as I do people! All these high intense workouts (especially weight workouts) should not be done back to back…and definitely not on the same day!  Give your body a rest.

What is your favorite Frappuccino/Starbucks beverage?!  How often do you hit up the Bizzle each week?  If you could invent any flavor of Frapp, what would it be?  I would want some sort of Almond Milk/Protein Powder/Carmel creation….Mmmmm…..

A Days Worth -O- Yum

Today has been the biggest whirlwind ever.  Running around like a crazy person from place to place.  Ah hectic life…gotta love it, right?!

Lets start with breakfast.

My new obsesssssssion!  ;-)   Add some raisins, Almond Milk, and Chia Seeds…and you get…

There also may have been an undocumented Starbizzle run on the way to the YMCA.  Who’s to say?!  ;-)

I got to the Y around 8:00am, and worked like a mad man on some major Eight To The Eight’s stuff!  It is crunch time with that, as all the official contestants plus all the contestants who didn’t make it…all had to be notified today.  Sad times for those who didn’t make it.  I know it’s just a fact to face when you only have x amount of spots to fill, and way more than that apply…I just feel bad because these people really put themselves out there.  I wish we could take them all!

Around noon it was time for my Express Sculpt class, which I am totally loving!  The numbers are slowly building, and I love hitting all the muscle groups in half the time!  Nice change for the body.

Lunch was comprised of some yummy leftovers from last nights Earth Fare run…

Mock Chicken Salad sandwich, carrots, and Veggie Booty goodness.

This “faux” chicken is seriously the closest to the real thing as it gets.  Bravo, Earth Fare.

After this, I walked back to work and finished up working on Eight To The Eights stuff, and then headed to the High School for KidFit!  This was our second to last week before school is out for summer, and it went so well today!  We had the entire gym to ourselves, and I let the kids sort of do whatever they wanted, as long as it involved them running.  ;-)   Some played basketball, others volleyball…some just plain ran around like lunatics…but hey…it produced sweat.

Headed backkkkk to the YMCA afterwards for what was one of the most intense Spin classes EVAH.  I don’t know what made it so crazae, but we were all dying….in a very good way.  Note to self…..use this CD when in need of a shower like sweat sesh.

Once Spin was over it was finally time to exhale…and head to an Indian Dinner yum-fest.

I was a bad blogger and forgot to photograph the menu…which in this case was key!  We got two amazingly delicious things…and of course I have forgotten their names.

The stuffed potato was out of this world!!!  Seriously, my new favorite dish.

Did I mention how much the people at Sahib L-O-V-E Maggie and I????  Free FLAMING dessert, anyone?!

Some sort of cheese/honey/fried deliciousness that was quickly consumed as soon as the flames died down.  YUM!

What a perfect way to end a very hectic day.  Who doesn’t love desserts that are on fire?!?!  ;-)

Later bloggies.  Debut of my Total Body HIIT class tomorrow morning at 5:45am…should be interesting to see how it goes teaching it at the crack of dawn!

Paper….Plastic……..BOX!

All the cool kids get their groceries put in boxes these days, I mean come on now people.

I forgot my plastic bags this morning, so I just had the girl put my stuff in a big box they had lying around.  Reason #45676 that I love the Earth Feezy.

Did I mention they had my fay-voh-rite chocolate on sale?!?!

AND my favorite booty!

Score!  Lucky day or what?!  I also picked up a scone to have later for lunch.  This was a new one at Earth Fare, and all I had to see were two words to know I was instantly sold:

Coconut.  Chocolate.  I don’t even think I read the rest of the description before snatching one up (notice the empty spot up front….that one became MINE!)

Now it is time to rewind a bit, before grocery fun-time…I had 6:00am spin!  Great sweat sesh as always, and Kimmy was there which made it even better!  Check out this sunrise as I was leaving the gym:

After the gym/grocery session I headed back to the casa to throw together some Triple Chocolate Oatmeal!  With two Spin classes to teach today plus a 3 mile run with Steph…it was carbo load time (which I will find any excuse for)

  • 1/2 Cup Oats
  • 1 Cup Chocolate Almond Milk
  • 1 Banana (nuked for 2 minutes prior to putting in)
  • 2 TBSP Chia Seeds
  • Sprinkling of Mocha Madness Trail Mix
  • Drizzling of Maranatha Dark Chocolate Almond Spread

Sooooooo good.  Hands down my favorite way to make oats!

Also, I didn’t get a chance to update last night…work was insane!  I got to try a new probable obsession, Passion Fruit Tea! (with jealous on-lookers in the background…the tea is MINE…back off.  ;-) )

Snacked on some Chobani and Annie’s Puff goodness…

And had the classic Panera standby for dinner.  Fuji Chicken Apple Salad Sans Chicken.  ;-)  Anyone else craving salads/cold things like whoa now that is starting to warm up?!?!

Doesn’t it look fabulous?!?!?!  I am so excited.

The official blog for the program is now online, although with very limited information.  I am posting the application today…and we start promoting it this week!  I was in the paper today!  woot woot!  (I will try and track down an online version of it for you guys!)  I am so beyond stoked.

Ehh, Go Take a Hike.

When you have weather like this:

Hikes are mandatory.

In preperation for fun times outdoors with Maggie, I threw together a quick cold breakfast.  Tried out a new cereal plus a classic:

Does anyone else mix their cereal?!?! I can’t remember the last time I had an entire bowl of one brand/kind.  Sliced a nana, and poured the Almond Milk…good times.

Two thumbs up, all around!

As I was leaving this morning I had to deal with this.  I SWEAR this photo was completely un-touched by me, as in…she did this to herself.

She was looking at me like:

A) Yes, I am a dog in a blanket and propped up with a pillow.

B) Why do you care.

C) Go away now…….eye closing time needs to continue.

Tough life, eh?

With a snoozing boxer at home (and a snoozing pomeranian elsewhere in the house) it was time to meet Magz for a hiking adventure!

We were ready for action.

We were promised animals such as these:

There must be a steadily growing trend of Turtle Takers in my neck of the woods.  Sadly…the only “animals” we saw were stuffed and/or plastic.

(is anyone else humming the Jurassic Park Opening Theme….admit it…….you are.)

Regardless, the hike was yahhhhh-mazing.  It is a 6 mile trail….3 up, and 3 down.  The first 2.3 miles are easy breezy with a few rolling hills, and the last .7 is pure hill out-of-breath craziness.  Love!  Check out the scenery!

LIZARD!  Ok, I guess we did see animals.  I love how it is still keeping with the Jurassic Park theme which I know you are STILL humming.

We were stylin’ and profilin’, YO!

Before we knew it, we had reached the top!  There is a massive (and ancient) Fire Tower at the top of this hike that scares the ever-living-poo out of me.  Maggie thought she could get me up it, but alas…the Blogger Boy only made it to the second level before I tucked my tail, and reversed back to solid ground.

Maggie, however, was a total trooper…and took my camera ALL the way to the top!

I took her word for the view, as I watched from below.  ;-)

The pics turned out amazing, though!  So beautiful!

By this time, my hunger was ready for the picnic I had packed, so it was so long…Tower O’ Fire (and doom, in my case)

We headed back down the trail, and then it was lunch time!

Almond Butter and Jam sammies….Veggies (Orange Pepper, Asparagus, Broccoli) and Pine Nut Hummus….and BOOTY!  This time I decided to give the Veggie a break for a hot second, and went with New York Pizza!  Loveeeee.

Also sliced up a nice Starfruit for dessert!  Love these little guys.

On that note….it is time for a MUCH needed shower, and get ready for work tonight!

2 Buck Booty.

My fay-voh-rite snack, Pirate Booty was on sale at the Earth Feezy today for 2 bucks.  Is it sad that things like this not only MAKE my day, but prompt my blog title?!?!?!  If so, I completely embrace the pathetic-ness up front. ;-)

Firstly…lets back track.  Today was the first day of running in 3 weeks thanks to the bum knee, so Steph and I set out on our favorite 5 mile course!

She was totally enthused to have her picture taken, let me TELL you. hahahaha  She also wants the blog world to know that she isn’t completely pigeon toe’d as the picture would have you believe.

I, however, am always ready with some sort of cheesy pose.

Rocked the 5 miles at a slow and steady 9:00 pace.  My knee started hurting around mile 4, but I was stoked that I made it so long without pain!  Stretched a TON when we got done, and it feels back to normal!  Normally this knee pain is HARDCORE and lasts a while, so I was happy to not be feeling it shortly after.  I am hoping that means I am somewhat ok.

After the run it was time to replenish the carbs….pizza anyone?!

This place is so fun!

My choice was a no brainer.  Mega Veggie!  I got the smallest one (which was still giganohughnormous) so I could have leftovers for work later tonight:

Don’t you love that BESIDE the Earth Fare is a friggin’ Donut Shop?!?!  Irony at it’s finest.  I think Steph and I were most excited for the bulk fooded, of which we sampled muchly.

I didn’t even make it to the car before I tore into the bags:

I still have to make a fruit/veggie run tonight, but I got the basics while at the Feezy.  Look at these containers of joy!

Then headed to work where other employees decided it was random photoshoot time for the blog:

Which was even better cold, believe it or not.

And you know I couldnt go a night without saving an animal.  I mean come on…the butterfly was calling my name hardcore.

It was awful.  AWFUL.  ;-)   Ok………awful = gone instantly.  So much for “savoring” the chocolate.  I eat my food like some crazed lunatic, and then wonder where it went when it’s gone.

Well, another Tuesday gone.  Spin class is calling my name at 5:45am.  I am using a new CD, can’t wait to see what they think of it!

I can smell Friday!!!!

It’s so close!!!!!

We left last off with me on an extremely jittery caffeine rush that actually turned out to be quite the productive afternoon.  What can I say, the coffee makes things happen.  I didn’t even nap!!!!  It must be the apocalypse!    Had a bangin’ snack while being productive and waiting for lunch:

Nice red pear plus my new obsession, Oikos style…CARMEL Greek Yogurt.  Whoooooa-mgah.

Cinnamon on top, made the perfect fruit dip.

Mmmmmm.

Finished my new spin playlist (see my last post for the new ideas I was tossing around) and in the meantime started thinking about lunch which eventually became a jumble of deliciousness!

Gardenburger with provolone and spinach….Veggie Booty (aka CRACK COCAINE) and some Brocc/Jalapeno Hummus.

Yum times.

I don’t know what it is specifically that makes the Veggie Pirate Booty so effing amazing, but I am telling you.  If I knew some foreign government secret, and was being held hostage…one bag of these little cuties waved in front of my face would have me squealin’ faster than a pig headin’ for the bacon shop!  Word.

Snack on the way to my classes (Kid Fit/Total Body HIIT) was slightly boring, but kept the doctor away:

And then jazzed myself up for Total Body HIIT with some magical beans…

Tonight.  Kicked.  My.  Butt.

I’m not sure if it was the fact that the gym felt like it was slightly warmer than Hades, or that I had already killed lower body this morning, but good NIGHT, it was a doozy.  Fun times though!

Gotta love the squats.

Even better when we step on/off the bench in low pulses.  Muhahahaha

Best part was, Ashlei came!!!!!!

Ignore the fact that we are Sweatasaurus’.  She also came baring gifts of home made RAW onion bread, and raw-nola!  Am I lucky, or what?!?! ;-)

Rushed home as fast as I could and yet again just threw some random items together for dinner.  Started with an egg puff, fitnessista style…

1 egg…nutritional yeast (nooch!), red pepper flakes, all nuked for two minutes.

Topped it with provolone, and put that bad boy on a whole grain English Muffin!

The monkey on the plate wanted the sammie.

Also steamed some broccoli, and added salsa/Greek Yogurt, and some carrots and Jalapeno Hummus! (current obsesssssion)

Shew.  What a day.  I love that it started and ended in the gym!  Good times!

Tomorrow is FRIDAY!!!! So stoked.  I have spin at 5:45am (new cd-izzle, so stoked…I love maiden voyages!) and then a meeting at 11:00 about our city’s version of Biggest Loser….it is getting very exciting people!  I get to be Bob…how friggin awesome is that?!?!  Well, as Bob-esque as I can be, haha.

Mystery Bizzle!!!!!!!!!

Thats right…it’s time to finally see what is inside of the mystery box!!!!!!!  Who is excited?!?!

For starters, is is Monday…and boy do I know it.

Got up extra early and did some Power Pump’age at my other gym this morning, because quite frankly I am still feeling the guilt from the MASSIVE amounts of cake I consumed last night.  (See my last post for all the gory details.)  For those who haven’t taken or heard of Power Pump, it is a 60 minute class that works each muscle group for a period of time, usually 4 minutes, with a 1 minute break in between to change out equipment.  This involves anything from decreasing/increasing weight, to switching from bar to dumb bell, etc.  Great class, and a super way to get in your weight workout for the day.

Chugged my protein shake (half before…half after), and then headed to do Yoga with the kiddos.

I am loving this Yoga/Cardio sponsorship program through the YMCA and the local schools!  School is almost over for them which is depressing.  My Monday’s will feel so different without them!

Have I mentioned how much I missed these guys this weekend:

I promise…she’s not dead.  She’s just comatose.

Needless to say at this point it was 8:30 and my body was in NEED of some breakfast.  Enter my classic.

Chia-Oat-Goodness!  This bowl was extra special and topped with my last (depression) blob of Trader Joe’s Almond Butter, and my new glorious Trail Mix I picked up at Fresh Market while in Georgia this weekend!

Chia oats are always, allllllways a big winner in my book.  I nuked the nana ahead of time and got it nice and melty, then cooked it WITH the oats.  Who needs to sweeten oatmeal when you have a banana!?!

After breakfast I collapsed into a mini coma, and woke up just in time to get my class together for my Lunch Sculpt class.  Snacked on a classic as I dashed out the door..

2 pieces of millet toast, with homeade pumpkin butter….flax seed….and cinnamon

Yumminess.  I’m not even sure if this snack made it from the kitchen to my car.  That good!

Went and taught Express Sculpt and incorporated some new killer moves for the booty!  Gotta love some pelvic thrusts, while back planking on a ball, with a weight on your hips!!!  Sounds fun, yes?!?!

I was/am in desperate need of groceries and some basic items, but I was on a major time crunch…so I had to go to the Wal*Mizzle.  I have to say, I was very proud of Wal*Mart today.  Not only did they have a ton of great produce, but alot of it was on sale!!!  Score!

The strawberries were $1.98 a carton, the mangoes were .98 each….and then I saw the items that literally produced a girl scream from my mouth WHILE in the store.  I was that excited.

ALMOND BUTTER AT WALMART?!?!?!?!?!?!?!  Did I mention these were $3.78 each?!?!?!  I was literally in shock.  Plus, I had never even SEEN the Dark Chocolate Spread!!!!  So excited!  Seriously, I think I almost lost it in the aisle.  People were staring.

Seriously though, I was stoked at all my nice finds, and surprised!

Came home famished with lunch on the brain…

Threw together a veggie burger on Arnold’s Thin, with Laughing Cow Swiss, spinach, and some ketchup.  Was also craving veggies like whoah, so I got to roasting the Sweet Potatoes and Asparagus.

Topped the veggies with nooch (nutritional yeast), and plated with some Veggie Pirate Booty (aka CRACK!)

Dessert was a serving (minus one) of my new Chocolate Cookies that Ashlei lovingly gave me! ;-) Sandwiched with raw honey goodness.

With a full belly, it was time to FULL DISCLOSE THE MYSTERY BOX!!!!!!!

Did anyone guess it?!?!  Let’s see.

“I’m anal about my gas!!!!”

That would be the quote of the day, when I was talking about how paranoid I was since I ran out of gas a couple of weeks ago like baffoon.  Kim and Christie thought it was hilarious that both “anal” and “gas” were used correctly in a sentence without the intended hilarity that ensued.

When last we left….we were en route for an Earth Feezy trip in the beautiful Georgia sun.  (lord it sounds like some Superhero show montage)

Go ahead and get jealous of the jorts, right here and now.

And I think we are all passed the point of needing an intervention for love of a certain crispy pirate’s hind quarters…

And I finally brought down and bought it…

The thought of a fermented, raw, tea had me apprehensive to say the least.

I gotta say……..this was NOT good times.

The flavor was odd, and vinegary.  It also was wayyyyy to carbonated for my liking.  I understand all the healthy benefits, and perhaps I just got the wrong flavor.  Between all the bad’s I listed, plus the gunk floating around (I know, I know…it’s good for me…calm down)….I was simply not.a.fan.  I rarely have to force myself to finish something, and this definitely took some “Fear Factor”-ish encouragement from Kim and Christie for me to chug this bad girl down.  *shutter*

What better to clense the pallet then my precious Chia?!?!?  Had this amaaaazing Chia bar to make up for the lack luster Kombucha aka Kombarfa.

Whilst we patiently waited on dinner…we hit up Barnes & Noble to kill some time!  Got some good reads in!

We started off with a fantastic veggie lettuce wrap appetizer!

That was able to calm the hunger beast until the main course arrived…

Veggie + Coconut + Lurv.  It was an obvious choice for the Coconut Curry Vegetables, with steamed brown rice…and a side of garlic spinach.  Get really to be realllly jealous.

Well, a fabulous day down in “Joe-Jah” is complete.  Time for bed!  I am full of some sort of mixture of Kombucha (ehh.), Chinese Lovin’ (yum.), and Choco/Kiwi goodness (yum squared)

Mystery Box!

Happy Wednesday!  Hope everyone is having a superb middle of the week!

Look what arrived on my doorstep today!  Oh, UPS man…how I love thee.

What is that bit of greenness peaking out for the blog world to see?!?!

You will just have to wait.  It is sooooooo good though.  Going to be totally worth the wait.  ;-)

Headed into work today with a little jump in my step thanks to the delivery.  Dinner was going to be a random mix of snacks because I am movie bound tonight!  Alice in 3D! (Yes, again)

I need to scratch out “for babies” and change it to “for blogger boys”

This, plus my favoriteeeeee granola:

And some chocolate goodness got mixed together for snackage:

“Dinner” was comprised of a jumbo bag of broc/carrots…and some dip of joy that I threw together:

  • Hummus
  • Refried Beans
  • Salsa
  • Natural Cheese

Yummmmmmm.

I have this to look forward to in just a bit during the movie!

And you know I have to save some sort of endangered animal:
