Ahh, Sleep.

How I love thee.  I seriously slept until 10:30am this morning, which is the first time in a looooong time.  I love days where you get to turn off the alarm, and just sleep until your body is ready to get up.  Sleep is so crucial, and I let my body have as much as possible at every opportunity.  As soon as I woke up I headed to the YMCA for a meeting about a promotional day that we are doing to help raise money for the Strong Kids Campaign.  I am so excited, because we get to plan another Spin-A-Thon similar to the one we did for Haiti Relief .  It is May 03, and I will have tons more information coming soon.  Any bloggers semi close wanna come out that day???  I will give you the royalty treatment, if so.  ;-)

After the meeting, I headed home to eat breakfast…which seemed odd…seeing as how it was noon.  Sleeping in = heart.  Missing an early breakfast = not so much heart.  It was time to make an old favorite from Trader Joe’s.  The best flippin’ pancakes in the world!

I tend to make a mess.

The recipe on the pancake box calls for butter and whole eggs.  I left the butter out completely, and just used an egg white.  The Chia made the batter so thick!  I am loving these little seeds!

Into the pan they went, with a spritz of Organic Pam!

While these little beauties got brown, I went to the fridge for some inspiration on a “sauce” to top these guys with.  Yesterday after spin class, my dear friend Matt was nice enough to give me a jar of HOMEMADE organic pumpkin butter.  How amazing are my friends!?  I decided to make a little mixture with that and some AB

Then it was time to flip the cakes!

I chopped up a big Granny Smith Apple, and plated the cakes.  Topped with the Pumpkin Butter sauce, with some walnuts on top for good measure. ;-)

It was pretty good.  ;-)

Sam patiently waited.

(and was thus rewarded with an undocumented mini size Pancake just for him!!!)

After I enjoyed this yumminess, I whipped up a protein shake to take to work with me tonight.  I teach KidFit and Total Body HIIT on Thursdays, and I am always in the need of a good shake between classes/gyms.

It’s gonna by yah-mazing.  Trust.

Now it’s time to prep for my classes tonight, and answer some emails.  Here is your daily dose of dog lovin’.

Back To Reality.

Well, I knew I was back home when I woke up to this:

Luckily, I also had these pups to remind me of the good aspects of Tennessee life.

I woke up with a bare kitchen, and threw together a yummy breakfast with the last of my supplies!  It was a Kashi waffle kind of morning.

“Sauce” was Almond Butter mixed with Natural Peach Jam

Also had an actual peach to go with the peach sauce.  Ok, so it was a peachy sort of morning as well.

It was then definitely time for Earth Fare!  It was good to be back in MY yummy food mart.  Loved the Floridian ones, but I do love me some Earth Feezy quite a bit.

Pretty soon I had a buggy full-o-fun:

I’ve gotten several questions about my grocery bill.  Here is some advice:

  • Think about staples….it is so fun and tempting to go and buy all “fun” food and snacks, but buying alot of meal creations will make your money stretch that much more
  • Buy produce elsewhere!  Rarely do I ever get produce from Earth Fare…it is way too expensive.  In this case, I went right next door to Kroger for the veggies/fruit
  • Make. A. List.  Going into a store like this with no list is like setting a 10 yr old free in Toys-R-Us on a sugar rush.  Not a good idea.  Stick with what you need
  • Buy big!  Get items that will last several uses or make several meals/snacks
  • Have fun!  Grocery shopping should not be a chore, it should be FUN!  I swear I have the time of my life in these places.  Try something new!
  • Coupon Hunt!  Earth Fare always has a large selection of coupon books up front to loot through, and save money.  For example…I got $1.00 off of EACH of my Almond Milks, making them around .98 cents each!  Score!

My total for today (both stores combined): $76.49

This may seem steep, but it will make at least 20+ meals.

Speaking of meals, it was time for lunch!

Veggie Indian stew topped with crushed red pepper, and a new ingredient I was excited to try:

Yay for yeast!  haha  I had seen this used on several of my favorite bloggies, but when Fitnessista said it tasted like cheese…I was sold.  Also toasted up a Whole Wheat Pita Pocket for dippage:

And since I started with some doggie cuteness….gotta end with some.

Do you see the distractions I must live with?!?!?!  ;-)

Productivity, who knew.

Who knew that with some good tunes in the background, and a semi-empty schedule…I can get alot done!  I worked alot on my Florida i-tunes mix…which is appropriately named “Flow-Rye-Dah” and contains some pump-worthy jams…all of which will be posted tomorrow.  Any suggestions?!?!  What are some of your favorite running tunes? 

Between being productive and lunch, I may have had several handfull’s of these gems:

What can I say, productivity yields hunger in my case.  I attempted to clean my room, but there were a couple of hairy monsters preventing my bed from being completely cleared:

I worked around them, as per usual.

Lunch time rolled around and I was feeling particularly creative again.  I love the days where I have time to think about/create meals.

Started out with a veggie burger (LOVING this brand), a whole wheat tortilla, and some Light Swiss L.C. Cheese!

Topped the tortilla with the cheese, and then cut the burger and placed it on top.  It needed something extra…so I added some Broccoli Slaw mixed with some leftover Almond Butter Sauce from last night.  It was like a yummy and healthy coleslaw!

Some Organic Pam went in a heated pan…and I grilled that baby up!

Put some Greek Yogurt on for the “sour cream” fix, and chopped up a huge pear to go alongside…

‘Twas yummy.

Finished off with dessert, of course, which was a kicked up Attune bar!

Chocolate AND Dark Chocolate Dreams is heaaaaaaven:

Perfection.

Headed to work early so I could get a quick workout in.  Did 30 minutes on the Elliptical, and 30 minutes on the AMT, aka Death Machine.  Doing this puppy on level 20 = Tyler looks like he just jumped out of the shower.  I was seriously drenched!  Love it though.

Showered, changed, and came into work.  A snack was definitely in order:

Dinner was leftovers, I am sorry to post.  Still delicious though!  Took last nights Stir Fry (Veggie Chicken/Tofu Noodles) and added some brown rice:

Followed by a dessert that made me extremely sad.  The LAST of my Powerberries.

I had the LAST of my precious berries, plus a clementine!

At least I went out with a bang.  I am seriously going to miss these little guys, however….now they will not be constantly calling my name EVERYTIME I see them. 

Well, so much for Tuesday!  I am going to close down the YMCA then head home and go to sleep asap, so I can teach 5:45am spin tomorrow!  Remember…I need Half Marathon song suggestions!!

Free Chocolate Time!!!!

Well, I have a winner of the Attune chocolate!!!  More later.  ;-)

Monday’s tend to be particularly long and consist of four classes spread over the course of a day.  I started out with my KidFit Yoga this morning at 7:45.  These kids continue to crack me up, but it is so fun to show them all these yoga moves…and have them actually remember them from week to week!  I rushed home dreaming of an oatmeal combination.

This bad boy had:

1/2 Cup Oats

1 Cup Almond Milk

2 TBSP Flax Seed

1/2 Cup Blueberries

1/4 Cup Chopped Walnuts

Also got to try out my new Truvia that I got last night!  Since I gave up Splenda for Lent…I needed some NATURAL sweetener!  ;-)

(The pills are my new joint supplement I am trying for the ole knee!)

Yummmmm.  After I was nice and full from breakfast, I had full intentions of being productive and working on a new Spin CD.  A two hour nap with the puppers won over, I am sorry to say.  I love naps, and recommend them to everyone!  They are great to re-energize!  Plus, who doesn’t like to sleep?  Come on.  I woke up, and it was time to head to the YMCA for Express Sculpt.  Grabbed my snack to go:

H2O goodness, and a huge nana with Dark Chocolate Dreams Peanut Butter

I specifically didn’t add PB to my oats this morning, because I knew I wanted this beast as a snack!

Express Sculpt was great today!  Normally in my 60/90 minute weight classes I have the participants go lower weight, and higher reps.  Today we switched it up and had high weights with low reps.  I love the 30 minute class, because I get to quickly hit the major muscle groups back to back…here was the line-up:

  • Squats with bar on shoulder, various counts (singles…2/2….6/2…..2/6…etc.)
  • Chest Press on bench with bar, various counts
  • Walking Lunges with bar help in overhead press, lower modification was bar on shoulders
  • Bicep Curls with bar, various counts
  • Dead Lifts with added row, various counts
  • Calf Raises on bench
  • Shoulders (Overhead press/squat combo)

I was famished and ready for a yummy lunch, so I headed home and decided to try out my new veggie burgers…who could resist this guy:

I loved this burger because it was delicious AND you could actually see giant chunks of veggies.  Double word score!!!  :-)  I put the burger on half a whole wheat pita pocket, and added some Laughing Cow Light Swiss, and Broccoli Slaw:

Added my favorite Veggie Stix and some carrots/hummus:

Why does he always show up looking depressed when it is food time?!

Yes….he sampled it all.

Finished off with some dark chocolate Edamame Beans, all of which went in MY mouth, and not the pups.

Chocolate is bad for dogs, I was just being a good owner.      ……don’t look at me like that.

Now onto the most exciting news of the morning!!!!
